Ingredients
HEAT oil in large skillet over medium heat. Add garlic; cook 1 to 2 minutes or until lightly browned.
ADD butter, mushrooms, truffle pate, truffle oil, salt and pepper; stir gently to mix. Cook 10 minutes or until mushrooms are tender, stirring occasionally.
COOK Fettuccine according to package directions; drain and return to pot.
ADD mushroom mixture to hot Fettuccine; mix well. Transfer to large serving platter or bowl; sprinkle with cheese. Makes 4 to 6 servings.
Tip: Substitute any combination of the following mushrooms: shitake, oyster, or portabello. Garnish with shaved Parmesan cheese and chopped parsley. Substitute finely chopped black truffles for pate.

Cook the fettuccine noodles in boiling salted water for 9 minutes - drain, cover and keep warm.
In a large fry pan saute chopped garlic in butter add 1/2 cup dry white wine (I like to use Vermouth). You can put in some chopped herbs: flat leaf parsley maybe a tiny bit of basil. Add 1.5 cups heavy cream stirring while you boil the sauce down. When the sauce thickens add 2 cups Parmesan cheese or a combination of Parmesan and Romano grated cheeses. Toss in the cooked fettuccine noodles and serve immediately.

my favorite is this: cook the fettucine as usual
in a frying pan put a little olive oil, chopped garlic, chopped basil leaves, heat them up, then add chopped tomato, let this cook just long enough to warm up the tomatos (cooking too long will turn them to mush) then toss the strained fettucine in the frying pan and mix before serving.
