Butter-Crunch Baked Scallops
Ingredients:
4 Tablespoons butter, melted
1 1/2 pounds bay scallops, rinsed and drained
1/2 cup seasoned low-carb dry bread crumbs *
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon dried parsley
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
Preheat oven to 400°F.
Pour melted butter into a 2 quart oval casserole dish. Distribute butter and scallops evenly inside the dish.
Combine the bread crumbs, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese. Sprinkle this mixture over the scallops.
Bake in pre-heated oven until scallops are firm, about 20 minutes.
Serves 4. 7 net grams of carbohydrate per serving.
* LOW CARB BREAD CRUMBS:
Keep a supply on-hand by making them yourself. Make a loaf of our low-carb bread, or use a commercial brand — your choice. Dry the slices and crush by hand or in food processor. Keep refrigerated or frozen. Another option is to use crushed pork rinds. Season as you wish.

I've been on Atkins for 3 months and have learned to modify a lot of recipes.
I made a lasagna with zucchini instead of pasta. It was pretty darn good!
Also, I invented some Un-Chiladas the other day. Chicken Enchiladas baked up without the tortillas.

Here is a recipe that I really love:
2 butterfly pork chops
1/2 cup of ricotta cheese
1/2 cup of steamed spinach
1/2 tsp of savory, parsley and salt
Mix spinach, cheese, and spices together. Stuff the chops with it.
Fold and hold chops into place with skewers.
Sprinkle with salt and pepper.
Cook at 375 degrees for 30 minutes.

Just like loaded baked poatoes
2 1/2 cups cooked cauliflower (I use frozen, cooked until tender, in the microwave)
1 cup sour cream (low fat works here, too)
3/4 cup shredded cheddar cheese (full-fat works best)
3 green onions, finely chopped
3-6 slices cooked crumpled bacon (or turkey bacon)
salt and pepper
Pre-heat oven to 350.
Chop cooked cauliflower into very small pieces.
Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
Stir in the cauliflower.
Place in medium baking dish and sprinkle reamining cheese and bacon on top.
Bake for 20 minutes.
Sprinkle the remaining green onions on top just before serving.

Why go on a low carbie diet?? Just stay the way u are and eat like u want to eat. If someone doesn't liek the way u look that is their problem. Beauty comes from inside and u should never question urself about that. Ppl that judge u by the way u look are ppl who just think beauty appears on the cover of a magazine!!!!
