When i went to America we went to a place called Panera Bread for breakfast and i always ordered the same pumpkin Muffin.
I wondered if anyone knew if i could get Pumpkin Muffins in England and if so where? And also if anyone knew a recipe? plz help me :) xxxxxxx

SPICED PUMPKIN MUFFINS

Nonstick vegetable oil spray
1 cup all purpose flour
1/2 cup whole wheat flour
1/3 cup sugar
1/4 cup (packed) golden brown sugar
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/3 cup shelled pumpkin seeds (pepitas), lightly toasted
1/3 cup coarsely chopped walnuts, lightly toasted
1 1/4 cups canned pure pumpkin
1 cup whole milk
2 large eggs
6 tablespoons (3/4 stick) unsalted butter, melted
2 teaspoons grated peeled fresh ginger



Preheat oven to 375°F. Spray 15 standard muffin cups (2/3-cup capacity) with nonstick spray. Whisk both flours, both sugars, baking powder, spices, and salt in large bowl to blend. Mix in half of pumpkin seeds and half of walnuts. Whisk pumpkin, milk, eggs, melted butter, and ginger in medium bowl to blend. Add to dry ingredients and stir just until incorporated (do not overmix).
Spoon 1/4 cup batter into each cup. Sprinkle remaining pumpkin seeds and walnuts over. Bake until muffins are golden and tester inserted into center comes out clean, about 25 minutes. Turn muffins out onto rack and cool. (Can be made 1 day ahead. Store muffins airtight at room temperature.)

Makes 15.

Pumpkin-Apple Muffins:

1 2/3 cups all-purpose flour
1 cup sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup canned pumpkin
1/2 cup butter or margarine, melted
2 large eggs, lightly beaten
1 Granny Smith apple, peeled and finely chopped
3 tablespoons sugar
1 teaspoon pumpkin pie spice

Combine first 6 ingredients in a large bowl; make a well in center of mixture.

Combine pumpkin, butter, and eggs, and add to dry ingredients, stirring just until moistened. Fold in chopped apple, and spoon into greased muffin pans, filling two-thirds full.

Combine 3 tablespoons sugar and 1 teaspoon pumpkin pie spice; sprinkle evenly over muffins.

Bake at 350° for 20 minutes. Remove from pans immediately, and cool on wire racks.

Yield: 2 dozen

Pumkin Muffins

3 cups plain flour
3 eggs
3 cups sugar
1 cup oil
2 cups canned pumpkin
1 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
pinch of nutmeg
Add sugar to oil and mix. Add pumpkin and eggs and mix. Then combine flour and dry ingredients (sifted), mix with liquid, pour in greased muffin tins and bake at 350 for 20 minutes.

Tools:
Standard Muffin Pans (2 needed)
Halloween Baking Cups

Ingredients:
3/4 cup butter or margarine, softened
2 1/2 cups granulated sugar
3 eggs
1 (15 oz.) can solid pack pumpkin
1 cup buttermilk
2 1/3 cups flour
1 tablespoon pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt

Cream Cheese Filling
4 oz. cream cheese, softened
1/4 cup (1/2 stick) butter, softened
2 cups confectioners' sugar
1/2 teaspoon Madagascar Pure Vanilla Extract
1/2 teaspoon cinnamon

Cream Cheese Filling
In food processor fitted with steel blade or mixer, beat cream cheese and butter until light and fluffy. Beat in remaining ingredients; beat until smooth and creamy.

Cupcakes
Preheat oven to 350°F. Place baking cups in muffin pan. Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Combine pumpkin and buttermilk. Mix flour, pumpkin spice, cinnamon, ginger, baking powder, baking soda and salt; add to creamed mixture alternately with pumpkin mixture, mixing thoroughly after each addition. Fill each cavity half full. Place a tablespoon of cream cheese filling on top of batter. Top with remaining batter.

Bake 20-25 minutes or until inserted toothpick comes out clean.

Makes 24 cupcakes.

Here's my absolute favorite pumpkin muffin recipe :) Hope it compares to the ones at Panera!

Pumpkin Cream Cheese Muffin

INGREDIENTS
1 (8 ounce) package cream cheese
1 egg
1 teaspoon vanilla extract
3 tablespoons brown sugar
4 1/2 tablespoons all-purpose flour
5 tablespoons white sugar
3/4 teaspoon ground cinnamon
3 tablespoons butter
3 tablespoons chopped pecans
2 1/2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 eggs
1 1/3 cups canned pumpkin
1/3 cup olive oil
2 teaspoons vanilla extract
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 18 muffin cups, or use paper liners.
To make the filling: In a medium bowl, beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth, then set aside.
For the streusel topping: In a medium bowl, mix flour, sugar, cinnamon and pecans. Add butter and cut it in with a fork until crumbly. Set aside.
For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt. Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.
Place pumpkin mixture in muffin cups about 1/2 full. Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.
Bake at 375 degrees F (195 degrees C) for 20 to 25 minutes.

I go to Panera Bread all the time! We knit by the fireplace there on Thursday nights, and yes, their pumpkin muffins are to die for!!!

Here is a good pumpkin muffin recipe:

INGREDIENTS
1 1/2 cups all-purpose white flour
1 cup white whole wheat flour
2 cups white or brown sugar
1 tablespoon pumpkin pie spice
Pumpkin pie spice if none is available:
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, lightly beaten
2 cups canned pumpkin (mashed) or mashed cooked fresh pumpkin
1/2 cup vegetable oil
2 cups peeled, cored and chopped apple (optional)

2 tablespoons all-purpose flour
1/4 cup white or brown sugar
1/2 teaspoon ground cinnamon
4 teaspoons butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.
In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.
In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.
Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

I prefer the pumpkin walnut muffins, mmmmmmmmmmm.
