Depending on how strong you want the stock, just simmer in 2-4 quarts of water for as long as needed. I usually will put it in first thing in the morning into a crock pot and let to go until lunch, I don't remove the shank, but then add things, ie veggies, garlic, onion, salt, etc.
Be creative, think outside of the box, you never know what you can do until you actually do it...next time change it a bit or add something more that you wouldn't have thought to add in the first place.....
And btw, ham goes great with cabbage!

Well, ham shanks are not low fat but they are delicious. Cooked dried beans are a wonderful dish to make using a ham shank To make bean soup you would soak a pound of dried beans (white, navy, pinto, kidney) for several hours in cold water. Rinse pick out the bad bits and put in a pan with about 2 quarts of water - do not salt the water. Add the ham shank and cleaned beans and a bay leaf (dried) cover and simmer for about 2 hours. You can also do this in a crock pot but it will need to simmer all day. An hour before serving add some chopped onion, carrot, celery, and simmer.
You do not put salt into the beans until just before you serve because salt will make the beans tough and have a longer cooking time. You can put pepper and other herbs into the simmering pot.
You can add some herbs d' Provence for a French touch or you can make my family's fav dish: Red Beans & Rice
For red beans and rice you would brown two pounds of hamburger in a skillet with olive oil and a lot of chopped garlic and add about half a small bottle of Gebhardt's chili powder - salt and pepper. When the meat is dark brown add to the cooking pinto beans. Simmer for another 20 minutes. Serve over steamed white rice with cornbread and a salad and you have a hearty dish.

Sounds delicious. Ensure all your veggies are the same size so they cook evenly. Toss them into a soup pot with chicken stock to cover. If you don't season w/some salt pepper at this point, your vegetables will not have much flavor. I would simmer about an hour, depending on the size of your veggies. I would then add my shank and parsley and simmer until the meat starts to come away from the bone. Remove your shank at this point, set aside to cool. Once cool, removed the meat from the bone and return to your soup pot. A bay leaf is a good idea as the other poster said. If you add it, remove it before serving/eating. Enjoy!

You can make bean and ham soup or split pea soup
Just add the bone to some water making sure the bone is covered. Add the split peas and simmer until peas are broken down. Usually two hours. Then add diced potatoes and carrots and cook until done. The bean soup is pretty much the same recipe but you use dried beans instead.

Put all those ingredients in a pot and bring to a simmer. Cook for an hour. You can also put it in a low oven for several hours. I'd throw in a bay leaf. Skim any foam that comes to the top in the first 15 minutes or so. Don't add salt and pepper until it is finished cooking.

Really easy! Drop it in water with your carrots, celery, onion, garlic and bay leaves in a crockpot with either dried split peas or 15 bean mix. That's it!
I'm a recent convert to ham hocks/shanks because of my husband. That's all the flavor you need, it's all in there. I didn't even have to add salt or boullion. It's amazing.

Peel and dice; Carrots, celery, potatoes and onions. Fry in little oil until golden brown. Add ham and brown further. Add enough water to cover and simmer untill done. Skim off all the residue that floats.
