Yummie! Would be similar to strawberry or grape just with a watermelon flavor. When I was a kid we lived in CA and there was this small store that was called "The Pop Shop" you could get just about any flavor soda you wanted. It was great!

It depends on the kind of mixture you intend to use. Fresh watermelon juice tends to oxidise so it changes flavor with time.
