Apricot Chicken
INGREDIENTS
6 skinless, boneless chicken breast halves
1 1/2 (1 ounce) packages dry onion soup mix
1 (10 fluid ounce) bottle Russian-style salad dressing
1 cup apricot preserves
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place the chicken pieces in a 4 quart casserole dish. Mix the soup mix, dressing and jam together, and pour over the chicken.
Cover dish and bake for 1 hour in preheated oven.

Beer. Seriously.
Open a can of beer. Drink half of it. Sit a whole chicken down on the can. Put it on the grill until cooked thoroughly.
This is very hard to screw up (the only time I screwed up was when I dropped the chicken).
I bought a stand at the local grocery store for about $10, but I've cooked many chickens without the stand. You just have to balance the chicken on the can, using his legs to steady him.

1/2 cup olive oil
1/3 cup orange juice
1/4 cup fresh lime juice
1/4 cup ground pasilla chilies*
2 tablespoons ground ancho chilies*
1 tablespoon minced canned chipotle chilies**
6 garlic cloves, crushed
1 onion, chopped
3 2 3/4- to 3-pound chickens, halved, backbone removed
Whisk oil, orange and lime juices, ground and canned chilies and garlic in 15x10x2-inch baking dish to blend. Mix in onion. Add chicken halves and turn to coat. Cover and refrigerate at least 4 hours or overnight, turning occasionally.

I like to use,olive oil,. lemon juice, crushed garlic and rosemary. You can add a few sliced chillies as well. Pour off excess marinade and bake in 180 degrees oven for 45 minutes or grill.

place chicken in a gallon size ziploc bag, pour in a bottle of Italian dressing & a can of pineapple juice from a can of sliced pineapples. marinate several hrs. or over night. we grill our chicken & when it is almost done we place the sliced pineapples on top & grill until done.
