About 10 years ago Hinoichi (tofu manufacturer) published a recipe for pumpkin bread made with tofu. I made it many times and it was wonderful, despite what you might think. I have lost my recipe and cannot find it anywhere. Even contacted the company but no reply. Would anyone have the recipe, or general advice on using tofu in a bread like this instead of oil? Many thanks!

Here's some oil-free recipes for Pumpkin Bread; but they doesn't have Tofu in it....Sorry

I FOUND ONE!!! (I don't like doing long answers, but here goes) I was just about to give up and send just the other links when I happened upon this:
Pumpkin Bread
1 1/2 cups flour (whole wheat pastry, spelt, barley, etc)
3/4 cup oatmeal, ground in the food processor
2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. pumpkin pie spice (mixture of cinnamon, nutmeg, ginger, allspice) 1/3 cup mashed soft, silken tofu
3/4 cup cooked pumpkin
3/4 cup rice, nut, or soymilk
1 tsp. apple cider vinegar
2 Tbs. molasses
1/3 cup apple juice concentrate
1/4 cup granular sweetener
2 Tbs. unrefined safflower oil
Fruit or all fruit preserves, optional

Preheat the oven to 350°. Mix dry ingredients, through pumpkin pie spice, in a large bowl. Thoroughly mix the wet ingredients, including granular sweetener, but not fruit or preserves, in a separate bowl. Fold the wet mixture into the dry, then add the fruit, if using. Pour about 1/2 the mixture into a square baking pan, just enough to cover, spoon dollops of the preserves, if using, about 1/2 inch apart and spread the remaining mixture on top. Bake for 25-30 minutes until center is firm.
