I know this is a hard one to explain but I have worked in bars before, but I always hate to change the beer barrel. I always think it is going to explode!!! I know the hissing noises are the gas but can anyone explain me how to do it?

If u worked in my bar , u would have been trained correctly and well enough to feel comfotable and confident in doing it.
So ask ur manager or supervisor.

Firstly check the barrel needs changing, shake the keg a bit and see how heavy itis. Then turn off the gas and unhook the line from the keg. There will be a rush of left over gas, but you will survive. Then hook up to a new keg, fill up the gas chamber float bit (forgotten the technical term for that bit - the piece with the floating ball) then turn your gas back on, go back to the pump and pull through about half a pint to make sure no gas bubbles in line.

on the wall in the cellar, there is a gas line and a off/on lever for each brand, locate the lever you require by tracing back from the keg to the fobbing tube, switch off the gas, lift the handle on the coupling that is attached to the kegs head this will enable you to turn or slide off the coupler replace in the same way, put on the coupler ,pressing the handle down until you hear a click it is now locked in place on the keg, the gas can now be turned back on, refill the fobbing tubes to vent any air from the lines, make sure the float in the fobbing tubes has re floated to the top of the tube, where no tubes are present you will have a lift motor the motor has a small light that is lit when it needs charging, or is on, press the rubberised button ,if it needed charging it will click on and charge, some recharge automatically,make sure you clean the cellar of any beer spillage, and pick up the plastic covers, otherwise they will go down the drain and block it. regards LF

I'm sorry to have to mention this but you are not refering to a beer barrel.
The word or term BARREL is only accurate for a real ale cask.
What you really mean is a pressure KEG.
Only real ale casks that can be called a barrel is a 36 gallon capacity.
An 18 gallon is a Kiln (Kilderkin) and a 9 gallon is known as a firkin.
Back in the 70's we also had a Hogshead and this was 54 gallons in capacity!

If you are talking about real ale such as bitter just place the nozzle over the hole and hit it with one solid blow as if you must knock a nail into a piece of wood with one blow and leave it strong enough to hang your coat on .

If it's lager your talking about it can't blow up anyway .

If it's a Guinness barrel make sure you connect in the right order or they'll be scraping you of the ceiling .

Usually open the tap and drain out the foam in pitchers until you get to the compressed air. While the air drains to nothing then you can take off the tap from the Keg. aka barrel.

Pull out on the handle and raise the lever. Make a one-quarter turn counter clockwise (righty tighty, lefty loosie) get rid of ineffective soldier place faucet on suitable of keg and place so faucet "catches." Make one quarter turn to the clockwise or till locked. Pull out on handle and decrease lever right now and firmly. Draw a lager.

there are several ways but remember its like a light bulb with gas. gas off first, pulling the side leaver out, unscrew, screw to new one and gas on last.
