Does anyone have a recipe & method for pumpkin pie.
I said i would make one for my Mrs for Haloween, that is if she does not go out flying on her broomstick!!!

Ingredients
For the pastry:
Sweet short crust pastry case
or a packet of ready made sweet short crust pastry with 40g/1½oz crushed pecans mixed in.
For the filling:
450 g/1lb prepared weight pumpkin flesh, cut into 1in/2.5 cm chunks
2 large eggs plus 1 yolk (reserve the white)
3 oz/75g soft dark brown sugar
1 tsp ground cinnamon
½ level teaspoon freshly grated nutmeg
½ tsp ground allspice
½ tsp ground cloves
½ tsp ground ginger
10 fl oz/275 ml double cream

Method
1. Pre-heat the oven to 180C/350F/Gas 4.
2. Use a shop bought sweet crust pastry case, about 9 inch/23 cm diameter and 1½ inches/4 cm deep.
3. To make the filling, steam the pumpkin then place in a coarse sieve and press lightly to extract any excess water.
4. Then lightly whisk the eggs and extra yolk together in a large bowl.
5. Place the sugar, spices and the cream in a pan, bring to simmering point, giving it a whisk to mix everything together. Then pour it over the eggs and whisk it again briefly.
6. Now add the pumpkin pureé, still whisking to combine everything thoroughly. 7. Then pour the filling into your pastry case and bake for 35-40 minutes, by which time it will puff up round the edges but still feel slightly wobbly in the centre.
8. Then remove it from the oven and place the tin on a wire cooling rack. Serve chilled (stored loosely covered in foil in the fridge) with some equally chilled créme fraïche, but warm or at room temperature would be fine.

Traditional Pumpkin Pie

Ingredients

one can (15 oz.) can of pumpkin (or 2 cups cooked pumpkin)

one (12 fl oz) can of evaporated milk

3/4 cup Splenda

egg substitute equivalent to 2 eggs

1 3/4 tsp pumpkin pie spice or
1 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves
1/2 tsp vanilla extract

1/2 tsp salt

one 9" pie shell

Directions

Preheat oven to 400 degrees.

Mix pumpkin, eggs, Splenda, and spices together in a large bowl. Slowly mix in evaporated milk.

Pour pumpkin pie mix into pie shell.

Bake pumpkin pie at 400 degrees for 10 minutes, then reduce heat to 350 degrees. Bake around 50 minutes. The pie is done when a knife inserted in the middle comes out clean

Buy a prepared pie crust - helps to cut the time down.

Next go buy - a can of Libby's Pumpkin - the recipe is on the side of the can.

Makes the best pumpkin pies!

The recipe on the back of the can of pumpkin is a very good one. I use it, and simply add just a tad more of the spices to it.
Now you done it....you made me hungry for pumpkin pie! Guess I shall be baking one too.

Go to kraftfoods.com. Look for Double Layer Pumpkin Pie. It's different, it's rich and creamy. I tried it myself.

Hi, just to thank willow for that recipe, which I have printed off to try. why on earth have people given her recipe (or any other for that matter) the thumbs down? I think you're really thoughtful-my husband wouldn't bother himself to make pumpkin pie, unless it was possibly for Steven Gerrard. :)

A variance on this is to roast slices of pumpkin. Cut it in to triangular cross section pieces, (like you would a melon), give it a light coating of olive/cooking oil and roast it. as you would parsnips. delicious!!

I just use the recipe on the back of the pumpkin can and adjust it to taste. It's easy! Happy Halloween!
