I love parties!! Here are some of the kind of parties I've had in the past:
Beach party! Everyone has to wear bikinis / Hawaiian shirts and beach gear. You can buy blow up palm trees and decorate your house with beach stuff. Its really good fun, especially this time of year when its getting wintry!
Everyone has to dress up as something beginning with the first letter of your first name. Mine is C so we had cats, Clark Kent, Custard, Cucumber etc etc. Very funny to see what people came up with.
Have an Oscar themed party where everyone has to dress up as their favourite celebrity!
Have a children's party with alcoholic jelly and ice cream and rude pass the parcel! Hilarious.

I am ages past my 21st, can't remember what i done, however it would be helpful if i knew whether you are a lad or a lassie. Try something like prince charming. Let all the guys take off one of their shoes and leave it at the entrance of the venue then the lassies have to pick and idenyify the shoe owner,take it to them and that will be their dance partner for the night.

or if you wanna go simple colour themes
or you could have like a disney/fairy tale theme where every1 dresses up as a character

if it's in the winter then have a BBQ, a friend of mine had a bbq on christmas eve and it was really good! hire a gazeebo, have a punch bowl of mulled wine, string fairy lights up! SOrted!
