Broccoli, rice and cheese casserole. Buy those boil in a bag rice.boil it. Boil the broccoli. Mix the rice and broccoli together. Melt some velveta cheese and pour over the veggies. Mix and bake for about 15-20 minutes in the oven at 300. Watch the veggies so the cheese won't burn. It is simple and delicious.Place in a really pretty dish. good eatings....

Easy to make, elegant, and affordable. Fresh steamed green beans, cooked, drained, and placed lengthwise on a tray. When ready to serve warm a mixture of some real butter and a small jar of diced pimentos. Pour over the top. Enjoy.

Well, depends on the meat, kind of...BUT
Last time we went to a "fancy" pot luck I whipped sweet potatoes, smoothed most of them in a nice serving bowl, then used an icing tube to "decorate" the top with some of the whipped sweet potatoes and marshmellow creme. It's a healthy dish (especially for women) and it looks attractive. And it's reasonably priced!

Broccoli and Cheese Casserole
3 16oz. bags broccoli florets
1 16oz. bag broccoli cuts
3 pounds Velveeta cheese
1/4 cup butter
1/4 cup half and half
1 tsp. black pepper
Seasoned bread crumbs
Boil broccoli in salted water until tender. drain and set aside to let all steam roll off (this will keep your casserole from being soupy)
Melt cheese with butter, half and half and pepper in microwave stirring occasionally. Mix cheese into broccoli. Pour in 3 quart baking dish. Sprinkle bread crumbs generously on top. Cover with foil and bake at 350 for45 min. remove foil and continue baking until golden brown. let cool 45 min. before serving

Dill Carrots... Cooked Carrots a bit of butter and about 2 to 3 teaspoons of dill, mix alltogether..It's wonderful!

well I don't know about fancy, but how about humus and pita bread you could spread it on a pretty plate garnish with lemon wedges and parsley, dripping olive oil over the humus, cut up the pita bread in little triangles.
