Yes it's called rennet. In the past all cheeses had animal rennet, but these days there is a non-animal based rennet too. Unless you know the source of the rennet of the chese company you are buying from, there is no way of knowing and most companies don't tell you what they are using to curdle their milk with. Cheese was first discovered when milk kept in animal skins soured...

many dairy products do contain this rennet enzime. you better always read the ingredients.
i have seen it already in camembert cheese, curd, sour cream..
i guess most cheese types do need a rennet (maybe exept the fresh kinds..) but they dont always use animal enzime for it, so just better read the ingredients
