ok, ignore the meat-eaters that are on this topic for some reason.
tofu per serving is a heck of a lot cheaper than meat, so don't worry about price. It's cheaper.
Simple veg recipe that I make all the time at family functions:
1 extra-firm tofu package, drained and mashed with fork
roughly 1/3 cup lemon juice
1tsp each dried oregano, basil, thyme
salt and pepper to taste
2 zuccinis chopped however you want
as many mushrooms as you want
stir-fry the tofu in some veg oil until golden. (10 mins on a crappy stove like mine)
add everything else but the mushrooms and cook til zuccini is softish (5 mins or so)
add mushrooms and cook for another couple mins.
serve over pasta or rice :)
I learned that family members give me a hard time, mainly because they don't want to do anything out of the ordinary. Unfortunately, you'll probably need to cook for yourself.
other ideas:
rice protein powder blended with almond milk and fruit
banana and peanut/almond butter
pb&j sandwiches
cereal with almond or soy milk (there ARE types of milk substitutes that are cheaper than milk)

All I can say is that in most cases meat costs more than vegetarian food. Why not try to get your family to eat vegetarian meals a few times a week? That way they save money by not cooking two meals. The book Vegan cooking for One (I think that's what it's called) is very very good, gives you the recipes all built around just feeding yourself :}

Eat mostly vegetarian. Dried beans and peanutbutter are as cheap as hotdogs.

here's the deal ...as soon as you become vegatarian or vegan...you are removing yourself from the top of the food chain.
there are animals out there that WILL eat you.
If God didn't want man to eat animals...he wouldn't have made them out of meat.
