Pot roast is my best, but in a pinch I can come up with a vegetarian dish. Sautee a medley of vegetables in a bit of olive oil with some Morton's Natures Seasoning. Obviously start out with the hardest (carrotts and cauliflower) and end with the softest (broccoli and zuchini). Remove the veggies to a serving bowl. Melt some butter in the pan and add a bit of flour to make a roux. Then add either heavy cream or a vegetable stock to make a sauce for the vegetables. Cook the sauce for a few minutes, toss the vegetables in the sauce and serve in the bowl.

I really like veggi lasagna here's a recipe I've found
VEGETABLE LASAGNA
1 (16 oz.) pkg. curly edge lasagna
3 lbs. ricotta cheese
1 (8 oz.) pkg. cream cheese, softened
1/2 c. minced onion
2 tsp. dried basil
1 tsp. garlic powder
4 c. fresh vegetable mixture (broccoli florets, shredded carrots, zucchini slices, chopped red pepper, sliced mushrooms)
4 c. (16 oz.) shredded Mozzarella cheese
3/4 c. grated Parmesan cheese
Cook lasagna noodles as directed on package; drain. Rinse with cold water, drain and lay flat on paper towels in single layer until needed.
Meanwhile, mix together Ricotta cheese, cream cheese, onion, basil and garlic powder. Stir in vegetables. Spread 3/4 cup mixture on bottom of 13"x9" baking dish. Arrange layer of noodles, one fourth of remaining vegetable mixture and sprinkle with some of the Mozzarella and Parmesan cheese. Continue to layer, ending with cheese. Bake at 375 degrees for 50 minutes or until hot. Let stand 10 minutes. 8 servings.

Cut up broccoli. Place on a cookie sheet. Drizzle with olive oil and salt and pepper. Bake at 425 for 10 minutes. Sprinkle with grated parmesan and broil until cheese melts. Squeeze fresh lemon juice over and serve.

Mixed Fruit Salad with Prawns
Prawns
1/4 cup fresh pineapple cut bite-size
1/4 cup green or red apple cut bite-size
1/4 cup or red grapes cut bite-size

I have many. I love to cook. Tonight for supper I made acorn squash soup from scratch. I live alone. 1 cooked acorn squash, 2 precooked potatoes, 1 Tble spoon butter, 1 Tble. minced onion, 1 cup of milk. Cook over med low heat, stir often. It's very good

Bake sweet potatoes or yams. Scrape out the insides. Mix with cinnamon, pecans, honey and butter. Put in buttered casarole. Top with minimarshmallows. Heat til marshmallows brown.
Yum. And seasonal too.

My vegetarian Chili is my favorite, 3 kinds of beans, boca crumbles, crushed tomates and lots of spices!
BTW, San Diego Art Nut - marshmallows are made from Gelatin, NOT very vegetarian!

I don't know if it's my best but its really good
you can make it with crab, salmon, tuna canned or fresh.
its layering
first canned french cut green beans
thinly sliced red sweet onions
fresh or canned mushrooms
all coloured peppers thinly sliced
then your meat
salt pepper garlic seasoning salt
topped with mozza and Cheddar cheese
bake for 20 Min's so cheese is bubbling and enjoy its so good

I love to cook these tuna pasta shells, but the only bad thing is that they are very labor intensive as each one needs to be stuffed individually. Lots of work, but taste great!

Tofu cooked in Lawry's Sesame-Ginger marinade. Super fast, super good and great cold the next day! I use the firm type of tofu. Yum!!
