Well, actually I'm a vegitarian that is allergic to milk, and lactose intolerant (they are not the same thing, being allergic to milk is bring allergic to milk protien, and lactose intolerant is not being able to have lactose, I am both so zero milk product), so the recipies can have egg in them.

Rhonda's Black Bean Veggie Burritos

1Green or red pepper, seeded and chopped
1 Onion (I used red) chopped
1-4Garlic Cloves minced
1 Jalapeno pepper (optional)
2 cansBlack beans, drained
1 canCorn kernals (the vacuum packed type), drained
1 canTomato paste (the small kind)
1-2Tablespoons soy sauce
Cumin, Thyme, Cayenne pepper (to taste, I used about
1 tsp. each.

Saute vegetables in balsamic vinegar with the spices until soft and onion
is clear. Add rest of the ingredients, stir up and cook till warm.
(I used a 12 in. nonstick skillet and it was full to the top!)
Should be thick, not liquid.

Spoon into ff flour tortillas , roll up, and bake for 10-15 minutes.

I had some steamed kale left over and rolled it up with the filling
interesting addition, I liked it! I also added some ff soyakass
jalepeno "cheese"

Warning! This makes a lot! I ate 2 each evening for 5 days, and still
had filling left over to freeze. It freezes well. Also, when cold,
I just microwaved for 2-3 minutes (with a damp paper towel to keep
the tortillas from getting tough), and that worked fine, too. I did
not use a jalepeno in my version, just personal taste. Obviously, I
liked them a lot to eat so many days in a row, but they were easy to
fix! Hope you all like 'em. Yum!--

Here's an ACTUAL answer to your question, since I'm vegan.
(You may want to tell people you're vegetarian since you eat eggs, since I know a lot of vegans that would be very offended by you stating that you're vegan but eat eggs. Vegan means no animal products whatsoever... but I digress)

My painfully easy recipes:
1 pkg extra-firm tofu, mashed with a fork, stir-fried with zuccini, mushrooms, lemon juice, salt, pepper, oregano, and thyme. Serve over noodles.
Smoothie: protein powder (Trader Joe's soy protein is good and very affordable), vanilla almond/rice/soy milk, and 1 mango. Strawberries, bananas, and frozen mixed berries work too.
Spaghetti sauce: 1pkg extra-firm tofu, mashed with fork. Stir-fry til golden, with an Italian spice blend (or oregano, thyme, basil, garlic). When ready, meaning golden and not juicy, add a jar of pre-made spaghetti sauce. Trader Joe's has some awesome ones that are inexpensive and organic.
Banana+almond butter or peanut butter
For a different taste, try tempeh stir-fried. I love it, but everyone's different :)

Kill an animal, skin it, season as desired, cook & eat the meat.
Save the poor vegetables for the rabbits to eat.

Eat red meat, it is healthy and natural. It contains proteins, minerals and essential fatty acids.
