Holy, i just had the BEST wanna-be taco filling substitute type thing... ready???... POTATO! I know it sounds crazy & even kind of gross, but it was really, really good. The cook rolled potato wedges with corn tortillas and deep fried them. Served with salsa and guacamole they were incredible!!
Finely diced portobello mushroom sauteed with a little wine, olive oil, garlic, shallots, black pepper and breadcrumbs makes an INCREDIBLE stuffing for phyllo dough tarts or even pasties. YUM!
Of course you can always buy smart life, chef yves, gardenburger, morningstar, boca, or quorn meat substitutes. I've even found soy chorizo & taco filling. Depending on your reasons for going veg, though, you might be turned off by all the processing that goes into making fake meat stuff. But if chemicals don't bother you, chow down james brown - fake meat is the shiz!

Mushrooms are a great replacement for meats in a lot of dishes.
I haven't made it in a while, but this is a stir-fry I used to enjoy a lot:
Onion
green pepper
celery
squash
zucchinni (optional)
mushrooms (optional)
roma tomatoes
green tomatos (optional)
egg plant (optional)
Salt, pepper, garlic, oregano, maybe chives and rosemary
Dice your vegetables and put them in a hot pan with butter or shortening. Add your seasonings, then stir until the green pepper and squash are a bit transparent. Serve as a side dish or over pasta.

Just use meat replacements. Morningstar farms and Boca make a ground meat substitute and it's perfect in taco's, lasagna etc. Quorn makes a mince as well but I have not tried that one. The Quorn cutlets and tenders are fantastic though.

Tex-Mex Salad with Chili Vinaigrette
Makes 8 to 10 servings
Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)
Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.
Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

but some of them are hard.
you can use tofu mashed up or cut into slices in any dish that used to ahve meat.
you will soon get over the hankering for the taste of meat which quite honestly you can't easily replace with other foods.
herbs and spices are imporatnt. also if possible eat organic veggies cos they ahve more flvor. you tongue will get a new taste.

go to www.vegweb.com. All the recipes on there are vegan. I get tons of stuff off there all the time, and all of it is YUMM-O! You can also go to the library and check out a vegan cookbook. :)
