It's because they haven't taken the time or effort to understand that there is a BIG difference between the two cultures and cuisine.

Both cuisines are from Louisiana. Cajun centers form the SW part of the state and Creole centers from the New Orleans area. There are similarities in having many dishes having the same names. Creole cooking utilized more tomato for flavor and has more African influence. The differences cannot be easily distinguished because of so many variations amongs family traditional recipes. That at least based on my experience anyhow.

Because most people don't know that creole is the black, african culture while the cajun is from the canadian arcadians. They both tended to use similar ingrediants and spices due to what was available.

Can you tell the difference in Mandarin and Cantonese food? For the most part we say Chinese food, even if it is Japanese or Vietnamese. I don't think you should take offense to other people's lack of distinction of our food here south Louisiana, It might be one of the best things we have going for us right now.

If they're the same they probably wouldn't have different names. So I guess there's probably a difference. Is it food or culture or both?
