I'm hosting a party and I am leaning towards a Mexican style layer dip. I would prefer a warm dip but I am open to all suggestions.

mexican layered dip....always need to make a double batch!

INGREDIENTS
1 (16 ounce) can refried beans
1 (1.25 ounce) package taco seasoning mix
1 large tomato, seeded and chopped
1 cup guacamole
1 cup sour cream, room temperature
1 cup shredded sharp Cheddar cheese
1/2 cup chopped green onions
1/4 cup chopped black olives
DIRECTIONS
Spread refried beans in the bottom of a (1-quart) shallow edged serving dish (you can use a transparent dish if you'd like). Sprinkle the seasoning packet over the beans. Layer the diced tomatoes over the beans, the sour cream over the tomatoes, and the guacamole over the sour cream. Sprinkle the entire layered dip with cheddar cheese, followed by green onion and finishing it off with a layer of black olives. Cover and refrigerate until ready to serve.

I love fresh homemade salsa. Also guacamole. And that yummy spinach and artichoke dip. I also like to eat chicken salad with tortilla chips.

All my friends love my "rotel from hell" dip @ parties!

Brown 1lb sausage in skillet & drain well.Take 1 pkg velveta mexican ( mild or hot, whichever your group will like) & 1 can rotel tomatoes ( again, hot or mild - your choice) & pour into crockpot over browned meat. Heat on low, stirring often til all melts together. I always offer a side dish of tomatoes, onions, japalenos, guacamole & sour cream. You might want to make a double batch - it goes fast!!

This is one my mom makes for parties, its good. This serves about 8, but can easily be doubled or even tripled.

8oz. cream cheese
4oz. can diced green chilies
1/2 cup sour cream
one cup diced dried beef (about 2 jars)
2 Tbsp. each:
dried minced onion
diced green pepper
milk
1/8 tsp white pepper

Combine all the ingredients in a casserole dish, mix well, and microwave until bubbly.

Enjoy!

Guacamole, diced tomatoes, sour cream, chopped onions and chopped peppers. Do it in layers in a glass bowl..it's looks real nice!

For something hot, just make a nacho topping and serve it in a bowl instead. I usually just make a batch of Taco filling, put in a bowl and top with diced tomatoes and diced onions.
