We lived in Germany for a few years and fell in love with the thick healthy bread. I have tried to duplicate it in the bread machine but can't seem to do it. Also, since I live in Japan, it is hard to find some ingredients. Anyone know a good recipe I can try? Thanks.

German Black Bread

Ingredients :
1 pkt Yeast
1 tbl White sugar
12 cup Bread flour
12 cup Medium rye flour
2 cup Whole wheat flour
1/2 cup Unprocessed bran flakes
1 tbl Caraway seeds
1 tsp Salt
1 tsp Instant coffee powder
1/4 tsp Fennel seeds
1 cup Water
2 tbl Water
2 tbl Molasses
2 tbl Cider vinegar
1/2 oz Unsweetened chocolate

Method :
(I would cut back on that a bit) Cool the mixture to 105-115 degrees and add to dry ingredients. I suspect the exact ingredients don't really matter all that much. As long as the flour-to-liquid proportions are such as to make a dough of good consistency, the result will probably be highly edible.

hey, last year when I lived in Germany, I went crazy for their bread! It's awesome... I asked people here and there for bread recipes and ended up finding out this great book in Berlin... in english! it is worth buying it if you're such a fan.

its very hard to make the german bread here...I also have a bread machine, but you get get a package of dr oetker bauern brot in the world market or krogers
