We're going to a party where we need to bring "finger food." So far people are bringing barbeque hotdogs, chips and salsa, tuna on toast, and veggies and dip. I was thinking maybe bruschetta? What do you think? And, if it is something that has a recipe, what is the recipe?

Bruschetta is a good choice. Also, consider something sweet. Mini lemon tarts, fruit skewers w/strawberry yogurt fluff dip or chocolate dip, peanut butter fudge are all good. If this is an all adult party, Amaretto balls are awesome. Recipe below:

AMARETTO BALLS

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 c Pecans, chopped finely
2 c Confectioner's sugar, sifted
2 c Chocolate wafer crumbs
2/3 c Amaretto
Pecans, additional

Process pecans and wafers separately; combine in food
processor with sugar. SLOWLY pour in liqueur until
mixture forms a ball. You might not need the whole
amount, depending on the humidity level. (If mixture
gets too wet, put it in the refrigerator -- uncovered
-- overnight to dry out some.)

Shape into small balls; roll in additional finely
chopped pecans. Store in tightly sealed container.
Yield: Not nearly enough.

I like Chicken Nachos with Hot Sauce. This is great and you can make it to your own taste.

Take 2 skinless chicken breasts and cut into 1/2 inch squares.
Fry in a frying pan with a little oil until cooked.
Place the cooked chicken in a small bowl and put in anywhere from a 1/2 cup to 3/4 cup of hot sauce and let it soak for about 10 to 15 minutes

Turn your oven on 300 degrees

I use a pizza stone, but you can use a cookie sheet or pie plate.
You lay some nachos down first...then sprinkle some of the chicken mixture on top. Make sure you get the hot sauce on the nachos too...then a layer of cheese (your choice).

You keep layering until you end up with cheese on the top. Bake for about 15 or 20 minutes until the cheese is melted.

You can add green pepper and red onion if you like.
I got the recipe from the website I found on the back of Frank's Hot Sauce.

Bruschetta is always good, but so are cheese sticks, shrimp, egg rolls and spring rolls, vietnamese salad rolls, potstickers, crackers and surprise dip, a platter of crackers and cheeses and meats, sushi (any kind, doesn't have to be raw fish), mini quiches... the list goes on and on!

How about a trio of brushette?

Bruschetta 1:

A traditional bruschetta alla pomodoro. Toast slices of baguette, then rub with a clove of garlic. Top with diced fresh plum tomato with torn fresh basil and salt and pepper.

Bruschetta 2;

A bruschetta of oven-roasted pears with pecorino cheese. Take an inexpensive bottle of balsamic vinegar and pour some into a pan; reduce over low to medium heat until it is syrupy. Set aside. Slice pears thinly, then toss in a mixture of olive oil and butter and roast in oven until soft. Remove from oven. Toast slices of baguette in oven. Place pears on top of toast, top with a slice of pecorino cheese (not aged), and drizzle with reduced balsamic vinegar.

Bruschetta 3.

A bruschetta with chicken liver pate. Find any recipe you like for chicken liver pate and make it. Then toast slices of baguette, drizzle with olive oil, and top with chicken liver pate--maybe add a small sage leaf.

If you don't like one of these recipes, try fettunta. Just toast baguette slices, rub the freshly toasted slices with a clove of garlic, really moisten with a high-quality extra virgin olive oil, and then salt.

Bruschetta is perfect. Make sure the toast is a garlic butter. Dont get plain.

Bellinis (small yeasty savoury pancakes - google them for the recipe) with a teaspoon of creme fraiche then a sliver of smoked salmon on top. Delicious!

I was surprised that some smarta$s didn't say "BOOGERS" yet !!

Anyhow... my favorite finger food would be a variety of breads with a variety of seasoned cream cheeses¨for spreading on.
