the important thing is to keep it at 60c for at least fifteen minutes and make sure on the buffet table it keeps hot enough to not be a food poisoning risk

food should be served at above 72 degrees, as long as it is served at that there should be no problem. also remember food should be only re-heated once and once only as this give bacteria chance to breed.
