Quick-N-Easy Curried Rice
Ingredients:
1 cup of rice, cooked
3 shallots or ¼ onion, minced
1 clove garlic, minced
1-2 tablespoon(s) curry powder
1-2 egg(s)
Salt and pepper
3 tablespoons vegetable oil
Cooking instructions:
Heat vegetable oil in a wok. Use medium heat. Don’t have a
wok? Try frying pan, but it might get messy.
Put the minced shallots (or onion) and garlic into the wok and cook until soft.
Throw in the curry powder and pepper. Mix well.
Break the eggs into the wok. Scrambled.
Throw in the cooked rice. Mix well.
Put some salt, mix well, and it’s ready to serve!

Curry isn't hard to make but it takes patience to make a good curry. "No good curry cooks in under three hours."
Here I am not talking of the store bought paste mixed with meat and put on the stove.
This is how an authentic curry is made in my home. to save time I grind the masala(paste) a day in advance and refrigerate it.
If you wish you can make 3/4 potions of the paste and freeze it. I do that sometimes too. It will stay for a month.
Chicken, cut into pieces 1kg.
Coconut, grated 2 tbsps.
Coriander seeds 2 tbsps.
Cinnamon 4 pieces.
Cloves 6 nos.
Onions, big 3 nos.
Garlic 12 flakes.
Ginger 1" piece.
Saffron powder ½ tbsp.
Red chilies 12-15 nos.
Coriander leaves A handful
Onions, cut finely 2
Tomatoes, chopped 2-3
Ghee /Oilfor frying As required
Salt To taste
Roast the grated coconut till brown in a little ghee.Grind together coconut, coriander seeds, cinnamon, cloves, onions, garlic, ginger, saffron powder, red chilies and coriander leaves to a fine paste without water.
Remove the paste, pass water in the blender jar and keep the paste water aside.In a vessel heat 2 tbsps. ghee and fry onions till brown.Then add the chicken pieces, chopped tomatoes, salt and stir on low fire for 10 minutes.Then add the ground masala and the masala water.Cook the chicken curry until quite dry or you may leave a bit of gravy if you want to have with rice.
