Ironically, true sushi rice isn't fresh so-to-speak. The modern way of making sushi rice is simply an imitation or reproduction of an accidental recipe. Originally, fish was stored on top of the rice, which caused a sort of sweet/sour fermentation. The rice was later cooked and eaten. People acquired a taste for this type of semi-fermented rice. That's the short version. Now-a-days they use sugar, rice vinegar, and salt to imitate the flavor of original sushi rice.
If you're referring to the rice toppings, the fresher the better. Some sushi restaurants in Japan and Korea serve sushi meat that is still twitching because it was just separated from it's...mmm, owner? *lol* I've never personally eaten this kind of sushi. Most restaurants in the United States serve it after it has been frozen (because supposedly it's to protect us from parasites). I used to live in a coastal town and would purchase fish just caught...usually dead already, but fresh enough. That's the only way to get a true sushi experience...but be sure you know what you're doing. Sushi is perfectly safe, but not every animal in the sea is safe to eat, and proper preparation is also a must.

Sushi was originally made using rice and PICKLED fish - not raw fish! That was safely kept for several days without risk of ill health!
Pickled foods are not classified as fresh, so THAT would probably be the sort of sushi you're asking about..! I don't know of anywhere that sells it now - even here in Japan - so you're unlikely to find it wherever YOU live..!

Sushi should be eaten as fresh as possible ideally in a restaurant but if you buy sushi to take home it should be eaten within 24hrs.....

Sometimes California Roll can be a few days old, and if properly refrigerated can be safely eaten.
If it smells rotten, don't eat it!
