I would like some ideas for something TOTALLY MEATFREE (this is for the carnivores who can't read and keep saying steak!) but really light so that it does n't weigh me down when I have stagefright. I usually have dry toast, boring huh?!?!

Technical difficulties, You don't even know me!! That was really mean of you! I always get meat eaters answering with steak or chicken, liver etc.Frankly I am a bit fed up with it saying as I post my questions on the 'Vegetarian and Vegan' site!!! To be slagged off by a 'supposed' vegetarian is downright nasty!!!! I have some lovely friends on here. If you don't like me that is YOUR problem alone!!!!!!!!!

Hey, this is the recipe for vegetables with a cashew nut sauce. It's really delicious (I've already used this to answer someone elses question of what to put of vegetables)
Basically just make the Cashew nut sauce and put it on top of normal boiled/steamed vegetables.
Cashew Nut Sauce -
1 tbs oil
1 onion, peeled and chopped
1/2 tsp Cinnamon
1/2 tsp ginger
1 garlic clove crushed
1 tsp cardamom
1/2 tsp turmeric
100g cashew nuts
pinch of salt and pepper
1-2 tbs lemon juice (optional)
Heat the oil in a medium saucepan, add the onion and the Cinnamon then cover and cook for 5 minutes until the onion has softened. Add the ginger and the garlic and cook for 2-3 minutes.
Add the cardamom and turmeric and cook for 1-2 minutes longer.
Tip this mixture into a food mixture and add the cashew nuts and 300ml/half pint of water. Whizz thoroughly until creamy.
Tip this smooth mix back into the pan and season with the salt and pepper, add a little lemon juice as well to suit your taste. Serve on top of vegetables.
(The official recipe is for Broccoli with cashew nut sauce - but I have had it on top of vegetables and it tastes just as delicious - especially if you aren't too good at making broccoli taste brilliant!)

Being a veggie I normally go for a quorn roast, 45 mins in the oven, quick and simple, just add some roast potatoes, some veg and some vegetarian gravy that you get from your local supermarket...quick and easy :)
You could always make a veggie spag bol by getting the quorn mince (can you tell Im a fan of quorn :) ) and the normal spag bol sauce.
You sound as if you might be pretty stressed with this so I choose the 2 easiest of them all....Good Luck!

First try cooking some rice in tea, I know this sound really wierd but trust me it works well with rice cous cous or even (poached salmon) don't use normal tea though try something aromatic like darjeeling or lapsang. Then take some fresh ginger, corriander and cumin and if you like some chilli powder and blend up with a little Olive oil to make a paste. Once the paste is made lightly fr in a pan with whatever vegetables you happen to have handy. Once they are slightly cooked but still firm serve on the rice with some fresh lemon zest. The lemon, corriander and fragrant rice work really well!

I like to cook spagetti squash. Cut it in half,clean out the seeds, place cut side down on a baking sheet and cook for 30 min, or until squishy. Oven should be at about 400 F When the squash is done, scoop out the insides, drizzle with a bit of olive oil, and stir. Meanwhile, prepare your favorite pasta sauce. I like Eden organics, if you add a bit of crumbled tofu or cooked lentils you have a pretty perfect meal. I just like using the squash instead of pasta, because it filling but light.Good luck!

Something very light and simple but makes you not hungry..
I had some left over vegetables in my fridge the other day so I made a soup. I used broccoli, runner bean and potato and bolied in up with a veggie stock cube. Plus I added some onion. Add as much water as is neccesary to make a soup consistency and, the the vegetable are cooked properly, mash them up with a masher. The potatoes and the boccoli mash, but the runner beans don't, so you get a tasty chunky soup.

Hey,
This is called Vegetable bolognaise (PLEASE DO NOT DELETE THIS, AS IT IS ACTUALLY ALL VEGETABLES)
Okay, why not try this? Get some gluten free penne pasta, cook, it only takes about 5 minutes after you drop it into boiling salted water.
Get as many root vegetables as you like or can find, lkie; Carrot, onion, garlic, parsnip, celeriac, turnip etc. Peel and put them into the blender(as if to mince them)
Get a pot, heat a little oil, add all the minced veg, cook slowly for about 15/ 20 mins without color. Add tomato sauce(ready bought is fine) and continue to cook until the veg is soft. Season. Add the warm pasta, toss, check the seasoning and serve.
This is also not too filling or heavy as it is gluten free and does not have the normal heavy feeling of regular pasta.

It's actually easy.
You can go to the grocery store, especially Ralph's or the Kroger, and look at the vegitarian meal section.
There are tons of tofus, which effectively immitate the taste of the meat. The tofus are made of beans, peas, etc.
Not only to the tofus, but also there are veggiterian pizza, lasiagna, etc.

Lentil bolognaise - just cook the lentils and add to the sauce.
Curry using qunioa mince
Vegetable chilli (Just leave out the meat and replace with extra beans)
Stir fry noodles with tofu
Veggeie sausages, potato and veg
Bean casserole
Loads of choice!

Cous cous...eat it hot or cold, buy it ready made from places like Tesco (get the med. one not the morrocan) or from dried pre-seasoned packets or make it yourself...........cook up some veggies, mix in some cooked cous cous and it tastes great.
