This store does not have meat substitutes such as tofu or lentile. I was wondering if anyone had any good recipes for vegetarian meals that are nutricious and are composed entirely of items you can get at a regualr grocery store. I do eat eggs and milk (I am a lactate-ovo wegetarian), so these are good for ingredients. Thanks for your help!!!

I have done things like spaghetti whith onions and baked beans in the sauce (I would not suggest baked beans in the sauce again. Beans do not make a good meat substitute!!!) and fried mushrooms (fried in butter, delicious!!!). I'm gonna try today some tomatoe soup with mixed vegetables thrown in with a little bit of spices.

Any other ideas? I don't have a vehicle so I can't drive to the next city to go grocery shopping.

First off I'd suggest you look at my answer to the cookbook question that was asked about 5 hours after you asked this question. Lots of good recipes that don't need weird ingredients.

Please note the link listed below for "Food Fight" grocery store! I've made quite a few orders from these folks and also Amazon for some of the interesting veggie friendly items! I currently call the Oklahoma Panhandle home and my nearest choice for 'civilization' is Amarillo (and that's probably the only time Amarillo and civilization got together in a sentence) that means a 2-3 hour trip (one way) to stock my cooler with dry ice and get frozen/refrigerated veggie stuff! Neither of these online stores cost as much as the gas I burn for a trip and Amazon's prices actually are ridiculously competitive with 'regular' stores (even with shipping factored in).

Ahh, the joy's of country livin'! ;-)

Vegetable soup, vegetable stir fry. Pasta with veggies and a basil or pesto sauce (you can find packages for this sometimes where the herbs and spices are).

My all time favorite is Black Beans with rice. Add a dollup of sour cream and throw some tortilla chips in the bowl before adding the rice and black beans.

You can also make your own Hummus too. It's pretty easy since it's made out of Chick Peas/ Garbonzo Beans(you can buy them in a can) and crushed garlic. You may need a food processor to get the Garbonzo beans the right consistency.

Rice + Dry beans = complete protein
Chick Peas + wheat bread = complete protein

I'd suggest ordering some lentils from a mail-order/'net source. You may also ask the store mgr. to order you some lentils, or a variety of dry beans/peas, or other items you would like. The mgr. just may do it.

Creamy Potato Soup - this recipe is a fave of mine, even though I'm not a vegetarian. I eat it as a meal, and don't have exact measurements, as you can make as little or as much as you want.

Peel and chop potatoes, chop celery and onion, and boil in water until fork tender. Drain, put back in pot. Add enough milk to about an inch over the potatoes. Add lots of velveeta until milk turns a VERY pale yellow color. Add white pepper, salt, and chives. Enjoy!

Pinto Bean Gumbo. Make dried beans according to directions on package, add okra, corn, onion, and a can tomatoes. Very nutrious and easy to do and the beans give you lots of protein. Good luck.

that's probably not fun. it might be fun but usually when you only have 1 grocery store it is not fun. ooh i know one it's right here.

Slow Cooker Pork Chops with Apple-Cherry Stuffing

1 package (6 ounces) herb stuffing mix
2 medium celery stalks, chopped (1 cup)
1 medium tart cooking apple, peeled and chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 cup dried cherries
1/4 cup butter or margarine, melted
1 cup chicken broth
6 pork boneless loin chops, about 1/2 inch thick


1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender.

Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
(Total time will vary with appliance and setting.)

My cousin also lives in a small town with only one grocery store. She found that if she asked about an item the store didnt carry they were more than happy to order it. As most grocery stores want to satisfy their customers you should give it a try.They now sell tons of stuff they didnt sell before, and all she had to do was ask!!!!!!!!!

stir fry. You throw a buncha green vegies (green beans, brocoli, etc.) in a wok ( big slightly curved bowl) and add heat. for added flavor, throw in a handfull of canned water-chesnuts and some chopped carrots. cook on high heat and when it's done to your liking, throw on a dash of soy sauce and serve (just a dash though, soy sauce is bitter and strong but good over veggies)

im italian, im not a vegetarian, but i rarely eat meat...i eat bread and pasta....tomatoe sauce has anti oxidants in it that help fight cancer, olive oil is good for your heart, and balsamic vinigar cleans out your liver and breaks up kidney stones.

Olive oil in a pan, de-seed tomatoes and blend untill liquid, pour into pan, (add onions, garlic, wine...etc...if you like) Salt, Peper a must...oregano if you like....vwala sauce, add to pasta ; )

and if you want you can make pasta Fagioli. which is basically pasta with little Cannellini beans (fagioli)....its very good!

I suggest you a) learn how to make tofu or tempeh, b) learn how to order bulk beans and such through the mail, or c) move to a town that is more friendly to your lifestyle.
