My favorite fruit salad has coconut, walnuts, almonds, blueberries, and whipped cream.
Pretty much, with fruit salad, you can just wing it.

Some things that really kick it up a notch are:
Star fruit - looks pretty sliced and has a nice citrusy flavor
Pomegranite seeds are such a pretty magenta color and have great flavor.
Kiwi - another pretty pop of bright green color and the flavor is wonderful.
Toasted coconut. Chopped nuts. Diced celery. These all give that little extra crunch and flavor.

Ambrosia
3 cans (15 ounces each) chunky fruit cocktail, drained
1 can (11 ounces) Mandarin oranges, drained
1 cup miniature marshmallows
1 cup flake coconut
2 bananas, thinly sliced
2/3 cup (5 fluid-ounce can) Evaporated Milk
1 cup sliced fresh strawberries
Combine fruit cocktail, oranges, marshmallows, coconut, bananas and evaporated milk in large bowl. Refrigerate 30 minutes. Stir in strawberries before serving.

1 (8 ounce) container frozen whipped topping, thawed
2 1/2 cups shredded coconut
1/2 cup chopped walnuts
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained (optional)
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
In a large bowl, combine the whipped topping, coconut,chopped nuts, fruit cocktail, pineapple, oranges, marshmallows, cherries, nutmeg and cinnamon. Mix togetherwell and refrigerate for 30 to 45 minutes.

Use the watermelon shell for the bowl when you empty it out, then add pieces of the watermelon, then add some canteloup, kewi, strawberries, raspberries, grapes, pineapple, blueberries, starfruit(is always fun). Use your imagination and be creative. Don't forget the lemon juice, it helps your fruit from not browning. Which is a turn off and no one will want to eat it.

seems like you've already got some good suggestions, might I add that when you've assembled your salad you pour white grape juice over it. It will keep it fresh and stop discoloration of the fruit, and makes a great accompaniment when serving the salad.

Depends on what kind of fruit salad you want to make? There are tons of different fruit salads. I made one recently using jicama and apples with lime juice and mint and onion. My mom makes one every year for christmas called 5-cup salad that has one cup pineapple, one cup madarin oranges, one cup coconut, one cup mini-marshmallows, and one cup sour cream or plain yogurt. My grandma use to make one with a variety of fresh fruit including apples and grapes and then add lettuce to it and mix mayonaise into the whole thing.

Try nuts, like pistachio or pecans or even walnuts or cashews. A chunk of good cheddar cheese shaved over the fruit works, too.
Add some of those Chinese crunchy noodles or some Grapenuts cereal for texture, if you like.

Try some herbs like mint,coriander thyme,lemon balm and also try grating some zest of limes,oranges into the salad all or some of these will add another dimension.Strawberries and mint go very well together and it is also very refreshing.
