Adobo Sirloin
INGREDIENTS
* 1 lime, juiced
* 1 tablespoon minced garlic
* 1 teaspoon dried oregano
* 1 teaspoon ground cumin
* 2 tablespoons finely chopped canned chipotle peppers in adobo sauce
* 1 tablespoon adobo sauce from canned chipotle peppers to taste
* 4 (8 ounce) beef sirloin steaks
* 1/2 teaspoon salt and pepper to taste
DIRECTIONS
1. In a small bowl, mix the lime juice, garlic, oregano, and cumin. Stir in chipotle peppers, and season to taste with adobo sauce.
2. Pierce the meat on both sides with a sharp knife, sprinkle with salt and pepper, and place in a glass dish. Pour lime and chipotle sauce over meat, and turn to coat. Cover, and marinate in the refrigerator for 1 to 2 hours.
3. Preheat grill for high heat.
4. Lightly brush grill grate with oil. Place steaks on the grill, and discard marinade. Grill steaks for 6 minutes per side, or to desired doneness.
Beef Adobo
Ingredients
1 k. beef, cut into 2"-cubes
1/2 cup vinegar
1/2 cup soy sauce
1 clove garlic, minced
1/2 tsp. salt
1 tbsp. sugar
1/4 tsp. ground pepper
1 bay leaf
10 peppercorns
1/3 cup cooking oil
Instructions
Combine all ingredients in a saucepan and let stand for 30 minutes.
Simmer and cover tightly for an hour or until meat is tender.
Drain and set aside.
Heat cooking oil in a skillet and brown meat on all sides.
Transfer to a serving dish.
Pour off all remaining oil from skillet.
Put sauce and cook for a few minutes more.
Pour sauce over meat and serve.
Garnish with tomatoes and parsley.
Serve hot. (Serves 6 persons)
Adobong Baboy
Ingredients:
1 pound pork loin, cut into chunks
1 head of garlic, crushed
1/4 cup soy sauce
1 teaspoon freshly ground black pepper
1/2 cup white vinegar
1 tablespoon vegetable or corn oil
Directions:
Place the pork in a medium size pot together with the garlic, soy sauce, pepper and vinegar and let stand for 2 hours. Cook slowly in the same pot until the pork is tender (about 30 minutes). Transfer the pieces of garlic from the pot to a separate pan and fry in hot oil until brown. Add the pork pieces to the garlic and then fry until brown. Drain. Add the broth to the fried pork and garlic and simmer for 10 minutes

ADOBO
3 to 6 lbs. meat (chicken, beef, pork, or mix them if you like)
1/2 c. soy sauce
1/2 c. vinegar
1 bay leaf
Few cloves of garlic, crushed
1 onion, sliced
Add all ingredients. Cover and simmer forever. Before serving thicken sauce and serve over rice. This is a good one for a slow cooker. The longer simmered the more tender the meat.
