Taco Crisps
Buy as many boxes of trisquit crackers as you think you will need, depending on how many people you want to feed.
On a cookie sheet, place the crackers, fill it up, the crackers do not need to be any distance apart.
On each cracker put a slice of cheese the same size as the cracker, use cheddar, gouda, mozzarela, American, jack, any good melting cheese you like. You can use 2 or 3 different cheeses, and place them randomly if you wish.
On some of the crackers put a small ammount of refried beans from the can, or all of them if you wish, but you might like a variey.
Every cracker needs 1 sliced, pickled jalapeno (buy a jar of them in the grocery store)
Add a small cut up piece of tomato to each cracker (this keeps them moist, as the cracker is dry.)
If you like, you can add a slice of olive as well, it will look pretty, either green or black or both.
Bake in the oven at 350 for about 10 minutes, or until the cheese is melted. Your Taco Crisps will be a hit, and if you want, you can have a side of sour cream to top them.
Mini Cheeseburger's
Cook little hamburger patties, a slice of any cheese you like, between two pieces of lightly toasted bread, any kind, and cut out in the shape of a bun. You can put one sliced dill pickle per sandwich, and piece of onion, or tomato, lettuce.
They have mini sliced breads also in the deli section of the grocery store.
Mini BLT's, the same idea as with the cheeseburger's, but with bacon, lettuce, and tomatoes
Garlic Bread dipped in warm pasta sauce
Fried chicken strips dipped in ranch dressing
Fried breaded shrimp with a sweet and sour dip, La Choy sweet and sour is very good
Eggrolls, also with sweet and sour sauce. I have a recipe, but you're probably going to be busy setting up your poker party, so buy some in the freezer section of your grocery store.
Mini hot dogs, put a cooked hotdog in a bun, and slice into three sections, having the condiments available for your guests, mustard, relish, ketchup, onions, etc.
Chicken wings, heck, just get them from delivery. You can also get a pizza, and slice it in small bite-size pieces, easy to eat and no mess.
Nacho Chips with Cheese and Salsa
1 Large bag of tortillia chips
1/2 a cup of grated cheddar cheese, or any other kind you like, jack, pepper jack, swiss, mozzarela, etc.
Sliced pickled Jalapenoes, optional
Place the chips on a microwave safe plate or platter
spread the cheese over it evenly
lay some jalapeno slices around
Microwave until the cheese is melted
Add salsa to the top, if desired
You can also add some refried beans on the chips, or on the side, as microwaving beans on the chips will soften the chips.
Mini Cassadias
Flour torillias, spread with grated cheese, I use cheddar, roll them up, microwave, and slice in half. Serve with salsa as a dip.

How about EDIBLE poker chips?!
Take yellow zuccini and cucumbers. Cut off the ends. Now use a potato peeler to make vertical stripes. Finally cut into round 'poker chips' and serve with dip!

I think that a variety of appetizers would be good. Cheese and crackers and veg. platters are always a safe bet, but what about also doing a meatball/sausage in a slow cooker (to keep it warm) and then just do a salad, garlic bread (or you could do sub rolls for meatball subs), chicken wings, nachos, finger sandwiches, etc. . Oh , and alcohol....lots and lots of alcohol (just dont get them too drunk because they still have to drive home)

taco soup
brown 1 lb ground beef drain in lg. pan combine beef with 1 pkg. of taco seasoning mix (dry)
add 1 package of ranch dressing mix
add 2 cups water
1 can each of great northern beans,black beans and 1can of kidney beans--I per the white kidney beans (CANNELLINI)
1 can of corn and 1 large can of diced tomatoes
simmer and serve in bowls with taco chips topped with sour cream and chopped up green onions if desired. this is very good!

for the ladies, try lowfat crescent rolls unrolled into rectangles (two triangles). Spread each rectangle with 1 triangle of light garlic and herb laughing cow cheese. Spread about 1.5 tablespoons of thawed frozen spinach on top of that and about a teaspoon - tablespoon of low fat bacon crumbles. Roll them up and freeze them for about 10 minutes. Take out and slice and then cook until golden using the temperature on the crescent can. They're decent cold and both men and women like them because they taste good but are also relatively light.

Go with fresh tortilla chips and salsa from your closest and best Mexican restaurant, not the garbage they sell in the supermarket. Throw in some guacamole dip too.

Bacon wrapped around water chestnuts, secure with picks, then place under the broiler til the bacon crisps.
Guacamole dip is always good with chips or crackers.
