Well, it depends on why you want to be a vegetarian. I am assuming they will have huge problems with an animal rights or environmetalism argument. Whatever your reasons, you need to do some research and present them with evidence to support your decision. They will probably just thin you are "going through a phase." Perhaps they will humor you.

If you are prepared to fix your own food, the gentlest way to persue this course of action might be a stance like "This is whats right for me, this is why. I appreciate your concern, but I need to make these choices. I will take responsibility. i have done my research."

If it's important enough for you then their opinion on the matter really doesn't matter all that much. I don't really think you should tell them unless you believe not telling them would cause a problem. I think their is a book about a rancher that became a vegetarian. I can't think of the title right now, maybe someone else knows because I'm to lazy to go look it up right now. Sorry.
It might be called Mad Cowboy, or something to that effect.

Either you don't like the taste of meat or you don't believe in the killing of animals. If it is the latter then I would consider the Bible. God provided the animals for us to eat. If it is the first reason then that is a personal choice. Either way, your family should not judge you for the choice just as you probably don't judge them for how they make their living. Should you tell them,,,,,I think that if they respect you and your feeling then yes. Sometime you will have to tell them. If you tell them like it is no big deal, like you are picking a pair of shoes to wear because you like them over the others, then you will be down playing it. If you make it a big deal then they may make it a big deal too. Prepare for some ribbing about it because they are used to eating it and may have a little fun with you at your expense. Take it in stride and keep your chin up.

i run 300+ mother cows and i am a vegetarian. don't know your age, but no matter how old you are, get advice from your family dr. on nutrition! it takes some hard work and choices to be vegan and maintain proper intake.
talk to your mother first and let her know you want to try this with medical guidance.
