A cashew nut sauce - I'll come back in a minute when I've found the recipe...
1 tbs oil
1 onion, peeled and chopped
1/2 tsp Cinnamon
1/2 tsp ginger
1 garlic clove crushed
1 tsp cardamom
1/2 tsp turmeric
100g cashew nuts
pinch of salt and pepper
1-2 tbs lemon juice (optional)
Heat the oil in a medium saucepan, add the onion and the Cinnamon then cover and cook for 5 minutes until the onion has softened. Add the ginger and the garlic and cook for 2-3 minutes.
Add the cardamom and turmeric and cook for 1-2 minutes longer.
Tip this mixture into a food mixture and add the cashew nuts and 300ml/half pint of water. Whizz thoroughly until creamy.
Tip this smooth mix back into the pan and season with the salt and pepper, add a little lemon juice as well to suit your taste. Serve on top of vegetables.
(The official recipe is for Broccoli with cashew nut sauce - but I have had it on top of vegetables and it tastes just as delicious - especially if you aren't too good at making broccoli tastes brilliant!)

Why boil veg. Investigate the web and find recipes from the Indian sub-continent. Punjabi cooking enables one to eat fully veggie, and to eat really tasty and substantial grub. Most of the recipes involve stir-frying seeds and onions until the onions are clear, and then adding veg and spices. Much better than limp,boiled veg English style.
The Punjabis use peas, carrots, cauli, broccoli, calabrese, courgettes and aubergines. Their cuisine does not specify unusual veg.

Veg boiled properly - ie. not overcooked, shouldn't need anything but a small dab of butter - or healthy marg if you prefer. Steaming is much better - a colander over a saucepan is enough - don't need an expensive gadget!
You could also roast them in olive oil - 220c, approx. 45 mins - lovely!
Failing that Heinz low fat ketchup!

I always like a squeeze of lemon on my veggies. Also in a pan you can heat a bit of olive oil, add some chopped garlic, some fresh ground pepper and some chopped parsley, sautee until the garlic is golden, top the veggies with this and then grate some fresh parmesean if you eat cheese. if not enjoy as is.

This is really good - it's the low sodium vegetable boullion cubes. It's really concentrated so I just cut off a small wedge and throw it in a half cup of water and boil. Then add some to your veggies.

Never boil veggies...steam, roast or bake them. Top them with low fat sour cream, herbs, a little bit of butter, or olive oil. Your body needs fats to digest veggies properly.

Hi you could put on low fat cheese, or now you can get croutons for a crunchy flavour. Other than that you could use a sauce like tomato, or brown sauce. Use anything as you will never know until you try it.

well i boil my veg with a vegatable stock cube drain the water away when cooked and it it lovely and tasty.
