you can pack some veggie sandwich like mint chutney sandwich, or you can pack some american cheese, lettuce, tomato, mayo and pickle... PB&J is standard, with a pack of Lance crackers/cookies, or some chips. Juice and 1 fruit completes a nice packed lunch.

Tofurkey deli slices on rye bread with a touch of mustard. Mustard is a very sturdy condiment, unlike mayonaise. Apple slices dipped in peanutbutter. Peanutbutter and fluff (if you aren't vegan). Any asian noodle salad with tofu and veggies. They taste good cold or room temperature, especially peanut sauce ones. I have sent mashed potatoes in a thermos to school with my son.

Lovely sandwiches, baguettes etc can be made with cheese, lettuce, etc. I used to make a huge salad with lettuce, cherry tomatoes, cheese, peppers, olives. You can make as much as you like, and even eat for two days in a row. It's delicious!

buy really rustic bread from your local baker. mix 1tsp of minced garlic into 2tbsp of mayo or mayo-like dressing. spread lightly onto bread. top with broccoli sprouts and red pepper. wash and peal a yam then slice it into thick chip disks. boil until slightly tender and chill. then pop them onto the sandwich while cool. add cheese if you want. its REALLY GOOD.
