b. fried cheese sticks with dipping sauce
c. french onion soup topped with mozarella cheese and croutons or broccoli cheese soup
d. cheese dip with chips

If your idea is making dinner, there are many options. One I made for my wife last night worked. Buy chicken breasts (boneless/skinless works best). In a frying pan, add a dash of a sweet white wine. (Cheap is acceptable, as the flavor will be subtle.) Add the chicken breasts and turn the heat to medium. You can then add any seasoning you prefer, or that works with the available sides. I used cajun seasoning, for a nice flavor that complimented the wine. (I added the seasoning fairly heavy, as the wine subdued the bite) Cook chicken till white clear through. Works best with side of rice, potatoes, or a salad. I made a box of Jambalaya rice, and had a full meal done in about 15 minutes.
Then you simply add ambiance (candles on the table, soft music in the background are two time-tested favorites)

Gucci girl has a point but, it can be done occasionally. Its all in how you lay it out. For instance you might want to go buy some tea light candles ( 50 for 10 bucks at Bed Bath Beyond ), scented massage oil ( 2 bucks ), satin sheets ( 20 bucks ) couple bottles of wine. Light the candles in the bedroom and around the bathtub ( filled with bubbles of course ) Just make the night all about her and making her happy. A cheap night but if you do it right you'll both be very happy by the end of the night and she'll be bragging about you to all her friends for weeks!

Cheap and simple to make..
Chix Alfredo
heavy cream and milk ( i use only heavy cream but it costs alot the bigger the container)
Parmesan
Italian seasons
basil
butter
mix together bring to boil. (in a small bowl to the side soften (not melted) some butter use equal parts butter and flour (roux) now only use this if you want the sauce alittle thicker. the trick is to use a different sauce pan adding the sauce to the roux keep adding til its to the thickness you like. then you can add it back into the larger pot.
get some fettuccine noodles
a premixed caesar salad (wash before eating)
chix breast skinless/boneless (only about 4)
butter/ lawyers seasoning salt & pepper
skilet medlow heat cook til there nice and juicey ( dont over cook)
get some premade garlic bread from the bakery in the supermarket that comes in the foil bag that you can pop in to the oven.
Chix alfredo caesar salad and garlic bread... have fun

I'd pack a picnic basket, with sandwiches from your favorite deli, olives, a salad (that you could make), and a bottle of wine, and head to the park or lake with a blanket.
If the weather where you are isn't great, have the exact same picnic at home on the floor with candlelight and music or a movie.

try already seasoned chicken thighs or drumsticks and cook in oven for an hour for crispy and flavor full juicy taste
add can of cream corn
and dice russet potatos boil and mash with cheddar cheese and garlic sour cream and ur good to go
make bag of tortolleni and or raviolies and add tomato sauce and mozzerella on top and serve pre made garlic bread that u have to heat and ur good also add pre made meat balls or grilled sausage if u want

When my husband and I were dating we were honestly broke,,, one day I made his favorite meal, set up the table with candles and place mats and wine glasses and put on some relaxing music. After dinner I pulled out a bottle of massage oil, I gave him a nice massage, you can get as involved as you feel comfortable. He really enjoyed the evening.

Dinner at your place. Find out some of his favorite foods from roommates, family or friends... Something filling but not sedating...
I'd go with something simple, or at least with parts you can prepare way ahead of time... you don't want to be worn out.
Candles, soft music?... then maybe a movie or drinks...

romantic artichokes and chicken with mushrooms
4 skinless, boneless chicken breast halves
salt and pepper to taste
1 tablespoon olive oil
1 tablespoon butter
1 (14 ounce) can marinated quartered artichoke hearts, drained, liquid reserved
1 cup sliced fresh mushrooms
1 cup white wine
1 tablespoon capers
DIRECTIONS
Season chicken with salt and pepper. Heat oil and butter in a large skillet over medium heat. Brown chicken in oil and butter for 5 to 7 minutes per side; remove from skillet, and set aside.
Place artichoke hearts and mushrooms in the skillet, and saute until mushrooms are brown and tender. Return chicken to skillet, and pour in reserved artichoke liquid and wine. Reduce heat to low, and simmer for about 10 to 15 minutes, until chicken is no longer pink and juices run clear.
Stir in capers, and simmer for another 5 minutes. Remove from heat; serve immediately

Orange Salmon with creole seasoning
1 tablespoon vegetable oil
2 salmon steaks
1 tablespoon Creole seasoning, or to taste
1 orange, juiced
DIRECTIONS
Heat the oil in a skillet over medium heat. Season salmon with Creole seasoning, place in skillet, and cook 2 to 3 minutes on each side, until golden brown.
Reduce heat to low, and pour orange juice around the salmon. Continue cooking 5 minutes, or until fish is easily flaked with a fork.
Italian Love Cake
1 (18.25 ounce) package chocolate cake mix
2 pints part-skim ricotta cheese
3/4 cup white sugar
1 teaspoon vanilla extract
4 eggs
1 (3.9 ounce) package instant chocolate pudding mix
1 cup milk
1 (12 ounce) container frozen whipped topping, thawed
DIRECTIONS
Prepare cake mix as directed on box. Pour batter into 9 x 13 x 2 inch greased baking dish. Set aside.
Combine ricotta cheese, sugar, vanilla, and eggs. Blend well. Spread mixture evenly over the top of the cake batter.
Bake at 350 degrees F (175 degrees C) for 75 minutes if using a glass baking dish, 90 minutes if using a metal pan.
Blend pudding mix and milk until thickened. Blend in whipped topping. Spread over cooled cake
