There's really no "usually" about it. Dinner in my (mostly*)vegetarian household is as varied as it is in any other. Last night we had lentil loaf, pasta with red sauce and lots of steamed brocolli. Tonight I will probably do stir fry with lots of veggies and some tofu strips because it's fast and easy.

*(I say mostly because my boyfriend's not veg, although he mostly just eats what I eat at home. Sometimes he'll grill himself a chicken breast or something to add to what I'm making, though.)

When I want to eat vegetarian with my wife I eat one of the following: whole wheat pasta with a primavera sauce, Dr. Praeger's Tex Mex Veggie Burgers crumbled over a taco salad, Goya bean burritos with a whole wheat tortilla salsa and cheese.

Plus their is always good ole Mac and cheese!

Steamed fresh vegetables, rice or potatoes and a soy product like tofu or one of the Boca patties. Sometimes I eat beans or lentils with fresh baked bread.

I love to have pasta!! I also eat lots of dishes with tofu, black beans, white kidney beans, and lots of fresh veggies. My mom got me a fantastic vegetarian recipe book...its got wonderful yummy things in it. I love potatoes and there are lots of really great potato recipes in that book. Vegetarian Times has great recipes too...I try many of them.
I try not to have the same thing twice in two weeks. I get creative!!!

Pasta is about my favorite comfort food, & there's something about making a big pot of sauce (gravy) while sipping some good red wine & watching "the Godfather" on my dvd player. It doesn't get much better than that!
