Just like some of the others are saying, its the blending together of the spices so that the single taste of the whole mix becomes much stronger, (as opposed to the tastes of each individual spice). All foods which use a blend of potent spice mixtures have a tendency to taste better the next day. Those with the most different spices will have the best improvement.
This is true not only of Chinese,Thai, and other east-Asian, but also of stews, casseroles, soups, lasagnas, pasta sauces and others. The absolute best improvement in overnight flavors is probably with Indian curries! (It is so strong and so much better the next day that when cooking Indian, I often will make the food a day earlier just to take advantage of this phenomenon! - this flavor increase also helps get rid of leftovers!)

Chinese food probably taste better the second day, because all the flavors of the spices, had a chance to join together, like team work and they absorbed themselves, into the rice, veggies and or meats.Which in return gives your taste buds...A burst of flavor. "Just my theroy" Hope it helps

Everyone has the right idea. Lots of foods overnight get a chance for the flavors to blend and sort of marinate. I love spaghetti, ham and cabbage, sauerkraut, meatloaf, etc much better the 2nd and even 3rd day.

it probably gives the food a chance to age, this enhances the flavors in some foods such as soup and Chinese foods. other things are better fresh like fish or vegetables. some people purposely age foods like cheese and wine because it adds a certain richness to the flavor of the food.
