I have never made home made soup before and we are part of a progressive dinner. I would like to satisfy everyone!!

Lentil Soup Recipe courtesy Giada De Laurentiis


2 tablespoons olive oil, plus extra for drizzling
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
2 garlic cloves, chopped
Salt and freshly ground black pepper
1 (14 1/2-ounce) can diced tomatoes
1 pound lentils (approximately 1 1/4 cups)
11 cups low-salt chicken broth
4 to 6 fresh thyme sprigs
2/3 cup dried elbow pasta
1 cup shredded Parmesan

Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery. Add the garlic, salt, and pepper and saute until all the vegetables are tender, about 5 to 8 minutes. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes. Add the lentils and mix to coat. Add the broth and stir. Add the thyme sprigs. Bring to a boil over high heat. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.
Stir in the pasta. Simmer until the pasta is tender but still firm to the bite, about 8 minutes. Season with salt and pepper, to taste.

Ladle the soup into bowls. Sprinkle with the Parmesan, drizzle with olive oil, and serve.


Instead of Chicken Broth use Vegetable Broth to make this vegetarian leave out the cheese and make it Vegan Even

Mexican Tortilla Meatball Soup

1 1/2 pounds of Veggie meatballs (trader joe's, or nate's meatless meatballs)

2 (4-ounce) can green chilies, chopped
2 (15-ounce) cans Italian-style stewed tomatoes, chopped, reserving the juice
8 cups Veggie Broth
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon hot sauce or to taste(Chalula)
1/2 cup all-purpose flour
Salt and pepper to taste
Garnish:
Chopped cilantro
Fried tortilla strips
Avocado cubes
Sour Cream (optional)
Monterey Jack cheese

In a large soup pot, heat 2 tablespoon vegetable oil. Add onions and garlic and cook for 5 minutes over low heat until translucent. Add chiles and cook 2 minutes. Add tomatoes and their juice, chicken stock, chili powder, cumin, and hot sauce. Simmer for 15 to 20 minutes.
In a small bowl, combine flour and veggie broth. Whisk into soup. Bring back to a boil. Reduce heat and simmer for 5 minutes. Add meat balls and simmer an additional 5 minutes.
Serve soup with garnishes

My nan makes a great veg soup and now i make it all the time in the winter. Just put a load of your fav vegetables in a sauce pan with a little water, add some salt and pepper and also a vegetable oxo cube, cook until all the veg is nearly soft and mash lightly with a potato masher not to hard though as you want some lumps in it as serve with crusty rolls its great and everytime you make it you can try diffferey vegetables so it never tastes the same.

OK, easy way is go to store buy a can of soup of tomatoes and can of mix vegetables, in in a deep sauce pan warm the tomatoes soup and then add the any amount of mix vegetables ( those must be drain and rinse) OK cover this for like 2-3 min and you can serve
and i think you like it, OK is a suggestion at oven you can add some any kind bread with butter and garlic bread
and you can enjoyed a nutritive a delicious soup with a garlic bread??? i hope you like it???

Split pea soup from allrecipes.com


INGREDIENTS

* 1 tablespoon vegetable oil
* 1 onion, chopped
* 1 bay leaf
* 3 cloves garlic, minced
* 2 cups dried split peas
* 1/2 cup barley
* 1 1/2 teaspoons salt
* 7 1/2 cups water
* 3 carrots, chopped
* 3 stalks celery, chopped
* 3 potatoes, diced
* 1/2 cup chopped parsley
* 1/2 teaspoon dried basil
* 1/2 teaspoon dried thyme
* 1/2 teaspoon ground black pepper

DIRECTIONS

1. In a large pot over medium high heat, saute the oil, onion, bay leaf and garlic for 5 minutes, or until onions are translucent. Add the peas, barley, salt and water. Bring to a boil and reduce heat to low. Simmer for 2 hours, stirring occasionally.
2. Add the carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.

hey denny... my missus made that soup 4 me long time ago... it takes about 20 mins 2 cook and i think yhere's nothing simplier than that:


1.fry some leek (no oil just a heat of a saucepan) in a saucepan (cut in rings about half an inch thick) till it's soft and a bit golden

2.pour about 2 pints of water in t saucepan and put about 5/6 potatoes cut in four

3.put a pinch of salt and a bit of ground pepper in it as well (obviously accordingly 2 taste)

3.bring 2 boil and cook 4 another 10/15 mins (till t ppotatoes are soft)

4.fill t plates and give it a five

5.serve it!


brilliant thing great time saver and such an amazing stuff 2 save a day if there's nothin else 2 eat and u're tired of take-aways...

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.

Sweat onions,leeks ,add veg stock,diced potato's & cauilflower.
When pot's & cauli are soft blend, add milk ,salt & pepper to taste.
