I like to have clay pot rice in Winter, here is the simple recipe.

<<<<<< Chicken & Mushroom Rice >>>>>>> serves 2

400 g Chicken thighs, cut into bite size
2 slices ginger root, slices thinly
4 dried shitake mushroom, soak in hot water till soft,
200 g Jasmine rice
1 can of chicken soup (for cooking rice)
water (for cooking rice)
2 tablespoon soy sauce + 1/2 teaspoon sugar + 2 tablespoon chicken soup

Chicken Marinade
2 tablespoon soy sauce
1/2 teaspoon sugar
1 tablespoon cooking wine
1 teaspoon garlic power
1 teaspoon corn flour
1 teaspoon sesame oil

1) Wash rice and cook with a electrical rice cooker, follow the instruction to adjust water level with chicken soup.
2) Marinated the chicken pieces for 15 minutes or till rice is almost ready.
3) When rice is nearly done (you see the water is bubbling on the surface of rice but still soggy) before the switch pops up, spread chicken pieces and mushroom slices on top of the rice quickly, cover the cooker as soon as you can.
4) Let it steam for about 15 minutes after the switch popped up or till the chicken is cooked.
5) Heat a sauce pan over medium heat, add 2 tablespoon soy sauce, half teaspoon sugar and 2 tablespoon chicken soup, simmer for 2 minutes. Drizzle on top of chicken rice.
5) Serve with boiled vegetables.

<<<<<< Braised Spare Ribs with Soy Sauce >>>>>>> Serves 4

800g spare ribs
3 gloves of garlic, crushed
1 thick slices of ginger, crushed
2 tablespoon cooking oil
2 tablespoon cooking wine or sherry
4 tablespoon soy sauce
3 tablespoon rice vinegar
2 tablespoon of rock sugar (they look like icebergs) or sugar
2 tablespoon of water
a few drops of sesame oil
coriander as garnish

1) Heat a pot of water, put spare ribs in boiling water for 2 minutes, wash under running tap water for 2 minutes to clear the blood and fat. Drain well and set aside.
2) Mix soy sauce, vinegar, rock sugar and water in a big bowl, set aside.
3) Heat cooking oil in pot over medium heat, stir fry garlic and ginger for 30 seconds or till fragrant, add spare ribs and stir fry for 1 minute, sprinkle cooking wine, stir fry quickly for 1 minute.
4) Pour vinegar mixture into the pot, bring to boil, reduce heat to low, cover the pot and cook for 40 minutes, or until liquid has almost completely evaporated. stir occasionally to prevent burning.
5) Test the taste and adjust the sweetness by adding a bit more sugar or you may add a bit more soy sauce or a little bit of salt if you found it is too sweet. Sprinkle sesame oil. Remove to a serving plate, garnish coriander on top. Serve with steamed rice

Fried rice with eggs is the most simple chinese dish,yet great tasting
1)Heat pan/wok with oil
2)Put in white steamed rice(cold) into the pan/wok
3)Stir fry
4)Add in chinese soya sauce(use sparingly) and mix well with rice
5)Beat 2 eggs in bowl
6)Add the beaten eggs into the pan/wok
7)Stir fry again(make sure that the eggs coat every grain of rice)
8)Stir fry until the every rice grain becomes dry(not moist and soggy),all the while using medium heat
9)Add a dash of pepper and spring onion (optional) and serve
Very simple to prepare,minimal ingredients needed,eaten by almost all chinese communities around the world(home-made dish)

OMG< I know so many... I used to live there... But I'll give you two lovely vegetarian dishes (everyone else has already given you meat ones) that are so easy to make:

Yuan Bai Cai
Needed: pointy cabbage, oyster sauce, 1 tsp cornflour dissolved in water

Cut the cabbage in slices, leaving out the bitter centre. Stiry fry in wok until nearly see-through. Add about 2-3 tablespoons of oyster sauce. Continue stir frying for another minute or two. Then add about 1tsp of cornflour dissolved in a bit of water to the dish to thicken the sauce.

Serve with rice


Xihongshi Jianjidan
Needed: eggs, tomatoes (same amount), sugar

Break eggs into wok, and let simmer for a little while until the bottom is solid (NOT the whole egg), then break up so you end up with little bits. Continue to stir fty until you have bits of 'omlette'. Take eggs out of wok and put aside. Chop tomoatoes and put in wok. Stirfy until skin comes off. Add eggs to tomatoe mix. Stirfy carfully as to not get huge mess. Add sugar, stirfy more. (If you dont have enough juice coming out of the tomatoes, you can add ketchup, but only a LITTLE bit).

Serve with rice.

I think that since China is such a huge land there are a lot of different types of chinese food. Usually when I go to Hong Kong there is a lot of soup and noodles. But when I go to Shanghai it is more like thai food. I think the soup is the best.

White rice with chicken. Possibly some green pepers to add color. I'd marinate the chicken in Italian dressing first. Comes out great every time.
