Most places now days use a regular vegetable oil, just like everyone else. The real traditional friteries use a combination of lard, beef tallow and shortening or oil. The trick is that the potatos are fried twice, with a cool off in between frying- that's what makes them sooooo addicting. They are usually picky about the potatos they use as well, in Belgium it's called a Bitje, don't know what it's called in France.
