Do you really have to ask that question? Humans eat just about anything plant or animal that is edible. What someone else might call dinner, you call disgusting...what you might eat for dinner, someone else might call sacred...like a cow in India. If you are economically challeneged (i.e. poor) you might eat any form of animal or plant protein source. Don't be so judgemental.

I don't know if I would categorize salt of the earth type people "Rednecks". Not all people that live off the land are "Rednecks". If you look closely at history those same people were probably our ancestors. However, I have grown up hearing of people that ate possum and sweet potatoes cooked together.

I don't know if anyone really eats Possum much anymore....but....I have this Really old cookbook(it has been handed down in the family for like Forever!) and believe it on not there is an entry for Possum....
Possum:
Plunge animal into very hot but boiling water(it doesn't say so, but I'll assume you shoot it first...lol)2minutes.
Pull out or scrape off hair without damaring skin .
Slit belly from throat to hind legs.
Remove entrails, feet , eyes, and brains.
do not remove head or tail.
Wash throughly.
if possible,freeze for 3or 4 days.
When ready to cook, wipe with a cold, damp cloth.
Sprinkle with salt and pepper.
put in roasting pan.
Add 1cup water and juice of 1 lemon.
Bake in hot oven(400f.)15 minutes, turning once.
Cover
Reduce heat and bake in oven at 350f. for 11/4 to 11/2 hours.
~Ok so there you have it...probably more than you wanted to know about Possum eating...lol~

The guys on Duck Dynasty probably eat possum. Especially if they eat nutria rats, squirrel brains, crawfish, frogs, etc. Would not surprise me if they also eat raccoon.

Redneck? What does this word mean? I feed the opossums, we all do in my community. They like cat food and table scraps.

this is totally disgusting but i used to go to school with this girl that lived down the street and her family was really really poor, i mean dirt poor... but she was really sweet so we hung out... one evening i went to her house with her and she needed to talk to her dad who was out in the shed behind their house... we went out there and her dad and her 2 brothers had a opossum hanging from the ceiling and they were skinning it to eat it. i about threw up. i could tell she was totally embarrassed about it but i never ever told anyone what i saw until now because i could tell she didn't want people to know her family had to eat that.

Yes, they do! At least in the part of Louisiana I know about. And they'd love to partake of the armadillos found on the roadways, but they can't crack the shell easy enough.
