Good for you! being a vegetarian is really healthy. Eating raw fruits is especially important to get natural fructose.And raw vegges to get all the good stuff. For breakfast you can have cerial,try to go for those that have real natural fruiit as opposed to those with artificial sweetners. Or pancakes with syrup! the bagel w/peanut butter is especially good because of the nutritional value of peanuts. Whole wheat bagels are really tasty as an option. Being vegeterian means that meat is not a protein source so please try to eat soy(tofu), beans(red esp), other legumes, -and other animal products if you aren't that strict such as egs, fish e.t.s. Being a vegetarian doesnt have a such a strict diet, theres lots of cook books around have really healthy and TASTY recipies.

Wow, you really have to do some research to get all the nutrition you need - check with a local health food store for books, magazines, and possibly classes . . . invest in a meeting with a good nutritionist.
Some vegetarians eat milk products and eggs - vegans eat neither.
- Start with whole grains - brown rice, oat groats, etc.
- Eat a wide variety of fruits and vegetables.
- legumes - lentils, and all types of beans
- milk and milk products, (consider switching to goat milk) yogurt, cheese, butter (unless you are a vegan)
- eggs (unless you are a vegan)
- nuts
- some oils - olive oil, etc. (mixed with balsamic vinegar and dijon mustard makes a nice salad dressing)
herbs and spices.
a nutritionist can give you more ideas, as can books and magazines.

You can find some great vegetarian cookbooks at the library or recipes on line. There are some really good casseroles and alternates to meat. You could also try Bocca products (burgers, dogs and ground Bocca).
It would be smart to talk with a doctor or nutritionist to make sure you are getting all of the vitamins and nutrients you need. It can be done on a vegetarian diet.

Here's my typical day - I'm a vegetarian, not a vegan:
Breakfast:
Low-fat strawberry yogurt, dry wheat toast, & orange juice
or
Slim-Fast Milkshake
Lunch:
Bean & Cheese burrito
or
tacos with beans instaed of meat
or
Veggie sandwich from Subway
or
Cheese sandwich, hard-boiled egg & apple from home
or
chow mein & white rice
Dinner:
Brown rice & steamed vegetable
or
Spagetti with marinara sauce
or
salad and pinto beans
or
eggs with salsa
or
stir-fried vegetables
or
homemade vegetable soup
Snacks:
nuts & raisens
yogurt
fruit
granola bar
spoonfull of peanut butter
trail mix

You should consult a nutritionist. Many people change to a vegetarian diet and don't get near the amount of vitamins, protein and B-12 they need. Especially B-12 as that's only available through animal products and suppliments.

Peanut butter is great, it's your protien. Also try tofu....i know it sounds grose, but cooked in sauces, it's good. It's really healthy for you too. Strawberries, blueberries, coconut, and kiwi also have alot of vitamins you will need to stay nutritionally healthy. You might also wanna check out soy products, they taste great and are meat free even though they look meaty. Enjoy!

Look up vegetarian recipes on line...there are MANY good ones out there. Just be sure you know what vitamins you need. The first time I attempted to go veggie all I ate was fruit and veggies and therefore was exhausted and got sick easliy. Don't forget the important proteins, vitamin D, some carbs (etc.). Good luck

you can make a risotto by cooking rice in stock and adding vegetables (mushroom risotto is really nice) or home made nut roasts are nice (the ones you buy in a packet do not compare!)
all kinds of pasta dishes, potatoes, salads, stews, soups, quiche. Look up veggie dishes on the net, there are loads. Try animal aid.
