Dan V- Water?? You must be a carnivore! Although I like to drink water it gives me great skin and keeps my vocal chords lubricated it is not a pudding, petal.
desert = sweet. Water = not sweet!!!


Princess , I love Sainsbury's and they are just down the road , I might just have to sample that lovely taste the difference apple pie with a huge dab of low fat icecream (for scientific research purposes , ofcourse!!!). I am gonna try making some brownies with a princess of my own , my little girl!!! I might EVEN have to eat one (just to make her happy , you understand) :0)!!!

Here's some...

Baked Maple Apple Halves
Dessert - Fruit - -

INGREDIENTS

1 soft tart (cooking) apple
2 t water
2 T maple syrup
1 t margarine

METHOD
Halve the apple crosswise and core it.
Put water in the bottom of a greased baking dish. Put the apple halves in the dish, cut side up. Pour a tbsp of maple syrup over each half and dot with the margarine.

Bake the apple halves in a 350F/180C oven for 4-5 minutes. If possible, baste the apply halves once or twice during this time. Serve hot.




Coconut Rice Pudding
Dessert - Pudding - -

INGREDIENTS

400 milliliters / 1 3/4 cups coconut cream
50 grams / 1 3/4 ounces palm sugar, finely grated
1 cinnamon stick
Zest of 1/2 an orange
100 grams / 3 1/2 ounces arborio rice
2 tablespoons castor sugar
Zest of an orange and lime

METHOD
Place coconut cream, sugar, cinnamon stick and zest in a medium saucepan. Bring slowly to the boil, stirring until sugar has dissolved. Add rice and turn heat to low. Cover pan and cook gently for 35-40 minutes. Remove cinnamon stick and stir the rice. You should have a creamy, tender mixture. Spoon into 4 small (about 1/2 cup) dishes, cover with plastic wrap and refrigerate for at least 2 hours.
Garnish with caramelised peel made from the julienned rind of 1 lime and 1 orange (dissolve 2 tablespoon caster sugar and 1/2 teaspoon water in a small, heavy-based pan. Bring to the boil. When big bubbles form, add peel and coat with syrup. Spread on waxed paper to dry).



Tiramisu
Dessert - Tiramisu - -

INGREDIENTS

2 cups flour
1 cup sugar
1/4 cup egg replacer
1 teaspoon vanilla
1 teaspoon salt
2 teaspoons baking powder
2 sticks margarine
2 cups strong coffee in a bowl
6 cups non dairy whipped topping
2 tablespoons amaretto, grand marnier, frangelico or any liquor
2 cups sliced strawberries and bananas

METHOD
For the sponge: combine flour with dry ingredients. Mix margarine, vanilla, sugar and egg replacer then add to flour and mix. Spread on a sheet pan and bake at 180C/350F for 35 minutes. Cool.
Mix whipped topping with liquor and set aside.

When sheet cake is cool, cut into "fingers" and dip in strong coffee and lay in bottom of tiramisu bowl. Top with sliced fruit and spread on whipped topping. Put another layer of coffee dipped fingers over topping, layer on fruit, then more topping. Make another layer and end with whipped topping. Sprinkle on bittersweet chocolate shavings or chocolate powder (optional) and garnish with a few pieces of sliced strawberry. Refrigerate tiramisu for several hours before serving.

Tiffin (tray-bake)
4oz margarine
8oz crushed biscuits (doesn't matter which kind but I like digestives, rich teas and a few ginger nuts)
2 tablespoons drinking chocolate
2 tablespoons golden syrup
4oz sugar (caster or granulated, it doesn't really matter)
4oz dark cooking chocolate

(Just make them all vegan)

Melt margarine, sugar and syrup and add drinking chocolate. Add crushed biscuits. Press into a greased flat tin and cool. Cover with cooking chocolate. When fairly set, cut into squares.

(Experiment with this a bit until you get it right for you, make sure the mixture isn't too dry or crumbly, it is best to be a bit damp rather than to dry as the syrup will dry off eventually anyway. Also, when crushing the biscuits, it is a lot simpler to just put the biscuits in a blender and the results are grand! This recipe is quite small, so a double mixture is wise once you have tried it out)



Chocolate Cake
7oz Self-raising flour
1oz Cocoa powder
8oz Castor sugar
4oz margarine
pinch of salt
7.5 fl. oz soya milk

Rub dry ingredients with the margarine then add the milk.
Line and grease two 2x8" tins and add the mixture.
Bake for at 180 degrees Celsius (at 170 for a fan oven) for 35 minutes (I would check a bit earlier though just in case).

Then for the topping;
2.5 oz margarine
1 tablespoon cocoa
3 tablspoons soya milk
9 oz icing sugar

Melt the margarine and the milk. Stir in the cocoa and sieved icing sugar (I prefer to use a beater and to whisk it that way, to make is smoother). Blend it until smooth.

I like to have bottom layer of cake, then the described topping, then a layer of melted cooking chocolate (dark), then the top layer of cake, then the described topping and finally a layer of melted cooking chocolate (dark). I find this gives the best taste, but you can just make a typical cake using this recipe if you prefer.

Try one of these:

1) Gelatin-Free Jello:
20 cups Juice blend (frozen and reconstituted, not from concentrate or powder), like Pineapple Orange
4 to 6 tablespoon corn starch (Depending on how firm you want it)

Heat the juice blend until it gets reasonably hot on stove. Add the cornstarch and stir until it is blended. When it thickens to something like jelly put it in a dish. Refrigerate for 2 to 3 hours or until firm.

2)Chocolate Tofu Pudding
1 block extra firm tofu
3 tablespoons high quality cocoa powder
3 tablespoons to 1/4 cup soymilk
3 tablespoons liquid sweetener. (flavored syrup, or maple syrup works really well)

Drain and cut tofu into a few bocks. Add a few tablespoons of soymilk in a blender and a little bit of tofu, cocoa powder, and syrup.
Blend on puree setting. Continue doing this until all ingredients are well blended, adding soymilk as needed.
Chill covered in the fridge. Can last up to about a week, but water may form on top…just mix it in.
Tastes really good over graham crackers and sliced bananas in a bowl.

I love the Sainsbury's Taste the Difference apple pie, and that's veggie friendly.

Bake some cookies and brownies! If you make them from scratch there won't be anything bad in them- there's loads of recipies, just do a google search!

You can convert a lot of recipes to vegan recipes by substituting ingredients, here's a website with lots of great information and recipes for great dishes and desserts. :)

I wasn't aware that any deserts actually have diets, which planet are you on? Even the Sahara desert doesn't need to eat, it is just a geographical region.
