Peking Sauce? Chinese take away usually gives out chili sause, soya sauce etc ..etc.. but not plum sauce (peking sauce) that is usually eaten with Peking Duck wrapped in egg crepes and then you dipped it in the sauce.

Spare ribs are usually cooked without sauce unless you specifically ordered one like five spice fried ribs, honey coated ribs, sweet sour ribs (this is making my mouth water). but otherwise peking sauce is strictly for peking duck !

You may be getting a packet of light soy sauce for chinese takeaways, if that packet of sauce is a smooth liquid.

If you mean in the packets, it is called Duck Sauce and maybe even named peking sauce (Peking Duck, the sauce is to eat with the duck) but if you mean the sauce that the ribs usually swim in, that thck really sweet tangy sauce, then no, that is another sauce entirely

The color of the soy sauce can turn to red using the "红烧” technique. What I suggest is read some recipes about how to prepare "红烧“ dishes. If you really want a prepared sauce, I would suggest Lee Kum Kee brand.
