Depending on how you want them to turn out, there's several different ways you can do it.

If you fry with butter, they'll come out richer and more crunchy. Do it as thought you were sauteeing mushrooms or onions, and allow the butter to fully cook away. Add cinnamon or brown sugar for taste.

You could use canola oil, which will make them crunchy, but with less fat. You will have to drain them when they are ready, and set them on some paper towel or something. Then sprinkle seasoning on top.

You could use a deep-fry method, but I would not recommend this as it makes the inside of the nut chewy and the outside crunchy.

Do not submurge them in deep oil... They will EXPLODE!

Most nuts have a hollow center and when the air inside them expands from the heat and steam (being that they are made up of water and protein) they POP! No one wants hot oil and POP to ever go together.

I suggest that you either bake them in the oven in a dryer atmosphere, dry roast them in a thick bottomed pan to toast them and get the oils out, or you could fry them, but in a shallow pan with a screen covering and shallow oil not covering the nut!

hi im pleased to give you advice on this subject well the best way to get the desired result is to put your cashew's into flat baking tray and sprinkle with olive oil and a little salt then put them in the oven then roast for 20 minutes checking them, your looking for that golden brown look meduim oven. i hope i was helpful

Use non stick fry pan--coat with small olive oil little salt (your choice0 and presto fry em to your liking>

Both these nuts are oil-rich in their own respect and do not need any additional oil.

If you put them in a hot skillet and keep stirring and turning till they turn crisp, you'll be home. If you want to salt them, keep salty water on the side and keep sprinkling this as you roast & toast them.
