so many say that , if vegetables are cut into small pieces, the proteines decrease. why it happens, what is the reason?

yes, cut into small piece some of the juice are gone and of course this is some things out from the big piece but the small piece still containing whatever vitamins. The only concerning is the cut open end will sooner or later oxidized with the air then become other material.

If cooking the veggies reduces the health benefits, then the smaller the cut pieces, the more vitamins and proteins will be lost because there are more exposed surfaces of the veg. for the goodies to escape.

Thats not so...the size does not matter it is whether or not the skin is intact or if you keep the water you cooked in.
The nutrients go into the water...so if you roast them you don't loose the nutrients.
Also if you make soup...same thing.
If I am mashing potatoes for instance, I cook in as little water as possible to keep them from scorching, then use that water together with butter and a little milk to mash...voila I keep all the goodies.
