Global Cuisine is something found most everywhere in the world. Chicken and dumplings are found in many cultures aroudn the world, and might fit here,(if only as an example).

National Cuisine is something recognized to come from a particular nation. Such as Chinese Food being recognized coming from the Peoples Republic of China.

Regional Cuisine could be defined as coming from a particular area or "region". In the example above, Szhezuan style of cooking being recognized as being from teh Szhezuan Province of China, or perhaps Grits being a staple in breakfasts in the US South.

Ethnical cuisine is recognized as belonging to a particular ethnic background, but can be made about anywhere. Cajun style cooking is related to the Cajuns who settled the Louisiana Delta, but their style of cooking can be found around the US and other parts of the globe.

national-usually only seen in the US-example apple pie

regional-confined to one place and considered the best like BBQ in North Carolina or deep dish pizza(Chicago)-

ethnical-part of a traditional dish for one ethnic background-example jerk chicken-Jamaican, general tso's chicken-chinese or prawn curry-Indian
