Im from Panama. I would say: Arroz con pollo, guacho de mariscos, gallo pinto, tamal de olla, arroz con guandu y coco, carimañolas, etc

I'm also from Panama. Apart from the first answer I would add the Sancocho, which is the typical Panamanian soup, which is chicken soup with yams.
