I know kimchi tastes great, but why is cabbage the main ingredient? And why is it made traditionally in the wintertime? This is for a project.

Kimchee is now popular all over the world. Cabbage is very, very cheap to grow, as are chili peppers, and vinegar is cheap to make also. Consequently, all the ingredients for kimchee are available to even the poorest of folks, it's easy to make, and it's just plain delicious!

If you want to get top marks for your project, turn it in with a jar of kimchee you made yourself. This might seem a strange thing to do, but trust me, it will get you top marks.

it's cheap and easy to make and only Koreans have a taste for it while others have to acquire a taste for it. I personally am soured by cabbages.
