im a vegitarian and i have a low budget.im tired of salad and burritos..i eat dairy.what are some good dishes?

Mashed potato and mushroom soup. very good and hearty and easy to make. Boil potatoes like you would for mashed potatoes, as your doing this clean fresh mushrooms and slice them. Saute in butter (you may add onions and or garlic) with the mushrooms . When potatoes are done ,mash add milk, salt and pepper and add your mushroom mixture add milk until your soup is thick and creamy. great on a cold night! Very cheap If you use garlic it is best to use roasted garlic. If you use fresh garlic watch your heat you do not want to burn it. Burned garlic is the worst.

Do you eat eggs? If you do....

Menemen (turkish dish)

slice/cube peppers and potatoes and sautee those in small amount of olive oil and butter. Once they are soft, add some diced tomatoe. When the tomatoes are a texture you like, clear spaces in the vegetables to break eggs into. Cover the pan and cook the eggs to your liking. Garnish with parsley.

Huevos Rancheros.

warm corn tortilla + beans on top of it.
On top of that: fried eggs with warmed salsa and cheese on top of them. Add an veggies etc. that you want.

quinoa is a great, healthy grain.

Soups and stew are always good if you need more ideas.

Spaghetti Squash Bowls-
1 spaghetti squash
1 medium onion
1 green pepper
1 clove garlic
4 medium tomatoes
2 TBS Extra Virgin Olive Oil
salt & pepper
1/4 tsp each oregano, basil, fennel seed
2 TBS butter
1/4 c parmesan

Pierce squash in several places for steam. Place on paper towel and microwave 18-23 min. turning after 8 min. until tender. Let stand uncovered @ 10 min. Cook onion, green pepper,and garlic in oil @5 min. Stir in tomatoes, s&p, oregano, basil and fennel. Simmer uncovered @ 5 min. Cut squash in half and discard seeds. Toss the fibers with butter and parmesan. Spoon tomato over squash and serve inside squash shell.

Buy one bag corn chips or Doritos, one big can of brooks chili beans, one bag morningstar farms veggie crumbles, mix beans and part of the bag of crumbles heat with some chili spices. onions, and tomato sauce(or stewed tomatoes, or diced) make some rice also layer chips then beans then cheese then rice, then if you wish to add salad toppings you may do so lettuce, olives anything you might want. top with either hot sauce or ranch dressing or sour cream Haystacks have always been one of my kids' favorite meals.

watch those burritos...they may contain lard

l egg plant

1 red l green pepper...

slice the eggplant and peppers...then add pasta sauce and some parm cheese...then bake...for about 30 min.

hollow out a butternut squash, and then put some salt and pepper (parm cheese also)...and bake for about 40 mins...
