VEGETABLE RELISH:
12 medium onions (4 cups ground)
1 medium head cabbage ( 4 cups ground)
10 green tomatoes ( 4 cups ground)
6 sweet red peppers
12 green peppers
1/2 cup salt (not iodized)
6 cups sugar
2 tablespoons mustard seeds
1 tablespoon celery seeds
1 1/2 teaspoon turmeric
4 cups cider vinegar
2 cups water
Grind vegetables using a coarse blade of food processor, Sprinkle with salt and let stand overnight in preserving pot. Rinse and drain. Combine remaining ingredients; pour over vegetables. Stir. Heat to boiling and simmer 3 minutes. Seal in hot sterilized jars and seal. Makes 8 pints.

I have made fried green tomatoes, the tomatoe / apple pie suggested here, pickled tomatoes and my favorite and easiest is green tomatoe pesto.
To make the pesto cut up the green tomatoes (all you have to cut out is the little core on top), put into blender, add 1/2 c. parm. cheese, 1/2 c. walnuts, 2-5 cloves of garlic, fresh basil, pasley, lemon balm, mint, chives, whatever fresh herbs you like or can get your hands on, salt and pepper to taste (I like a lot of freshly ground pepper). Stream in some olive oil and blend at full speed. No need to cook, pour over hot pasta and enjoy! You can also freeze. I use small snack size zip locs and place these into larger zip locs. Then I remove what I need, place in mic. 30 or so to thaw and use at once in hot pasta. Sorry recipe portions are so vague, but I kind of use whatever I have on hand and it always works. Enjoy!

Arrange tomatoes in large, shallow, greased baking pans, or bake in 1 pan, in batches. Tomatoes should not touch. Bake uncovered in 400° oven 20 minutes, turning halfway through.
For crunchier coating, dip slices the second time into egg mixture then into seasoned bread crumbs or corn flake crumbs, with a little Parmesan cheese, if desired.

1)Sounds strange here..but trust me it's great...cut in chunks and replace the apples in any good apple pie recipe..add a squeeze of lemon and a bit more sweetener!
2)You can also pickle them.

Go southern- fry them babies up after you flour them...throw em in between 2 peices of bread and youve got yourself something.
