They are edible. Small rays may be cooked similarly to other fish, typically grilled or battered and fried.

Stingray recipes abound throughout the world, with dried forms of the wings being most common. For example, it is grilled using charcoal in Malaysia and is a popular dish known as Ikan Bakar. Generally, the most prized parts of the stingray are the wings, the "cheek" (the area surrounding the eyes) and the liver. The rest of the ray is considered too rubbery to have any culinary uses.

Stingray is also sold as a cheap imitation scallop.
It is used best when grilled, or broiled with some oilve oil and salt/pepper. Curried dishes, pad thia, are also both good uses for stingray, as is a cream based soup, it produces a slightly sweet mellow flavor in the soup.

I believe it is. I have heard that some restaurants cut round pieces out of the wings with a small cookie cutter or similar utensil and pass them off as scallops.You can search Yahoo, Google, Ask.com, etc. for seafood recipes and specifically sting ray.

Stingray is delicious...

The french eat it this way:

"Raie au beurre noir"
Cook the "wings" in a court bouillon (fish consommé)
remove from water, cut in several pieces, then serve.
Accompany with boiled potatoes, and a "black butter" (melt your butter in a saucepan until it starts to turn dark, remove from flame and add 2 tablespoons of vinegar. Serve immediately while still hot.

In Spain it's done several ways...

"Raya Frita"
Cut the wings in small pieces (say 2 x 3 inches)
Dip in batter (like for tempura) or in flour, then egg and breadcrumbs. Deep fry and serve hot with a red pimento and onion salad.

"Raya Colorá"
Cut the wings in several pieces ,
Make a "sofrito"... put 1 chopped onion, 2 chopped green (sweet) peppers, 2 cloves of garlic (minced), in a large skillet with 3 tablespoons of virgin olive oil on a medium heat. Once the onion is transparent add the pieces of ray, 2 diced tomatoes, 1 bay leaf, two tablespoons of paprika, 1 tablespoon of paella spices (saffron, etc.) or a treaspoon of turmeric (if you don't have the special paella spices). 2 potatoes, peeled and cubed, salt and pepper. Cover with water and allow to simmer until the potato cubes are tender.
Serve immediately with a nice white wine...
There are more, but these two are my favourites.

The stingrays do not have "bones", their skeleton is made of cartilage (similar to that white piece in the point of a chicken breast). Some people who like to "crunch" eat the whole thing cartilage and all, those of us who don't, scrape the luscious white flesh from the cartilage (I then put it aside to feed to my cats afterwards...they love it and the gelatine it contains is good for the bones!)

We love grilled or curried stingray over here... darn good with hot chilli sauces - stingrays are very popular food item with locals

It's commonly eaten in singapore and malaysia. Grilled stingray is delicious.
