It's excellent and Bon Appetit Magazine says that Peruvian food is the next "big food craze". Because of its proximity to the Pacific Ocean, some Departments of Peru feature an abundance of seafood. (department in Peru is like State in USA). Peru has large immigrant populations, so there are influences from Japan, China, Italy in their cuisine. Peru also is quite geographically diverse. in addition to the coastal lands, there are mountainous regions and also rain forest regions. The food that Americans are the most familiar with is that of the coastal areas. particularly from the capital city of Lima. The dish called ceviche (or cebiche) is a well-known dish form Lima. It contains various types of seafood that are "cooked" through the action of acid from citrus (usually lime) juice, usually combined with onions and hot chiles. Peruvian dishes are usually accompanied by either potatoes or rice or both. The Peruvian government recognizes over 5,000 varieties of potato.

My parents went to Peru. Peruvians eat alot of guinea pigs. The Peruvians actually have kind of a cage under their floor in the kitchen, and when it's time to make dinner, they reach down and pull up a guinea pig and cook it. My parents tried it a restaurant that locals took them to. Dad said they're boney, not much meat to them. Also, they eat a white fish that they prepare very sour, with vinegar, I think.

It's tasty, and there's a resturant in SF, that serves it. It's nearly expensive.

the dip is great that is my favorite

It taste better than Mexican food,way better than mexican food.
